Grilled Chipotle Sweet Potatoes
pretty good. baked for 45 mins at 400 degrees instead of microwaving, but it came out great.

Quinoa and Black Beans
used super sweet corn kernels and this side dish is wonderful. very healthy and delicious. the corn brings out the sweetness.

Smoky Four-Pepper Salsa
this is very good, even better when refrigerated for a day or two. it is a lot of work for a salsa, though.
