Chocolate Peanut Butter Nirvana

This was quite tasty, but for some reason the chocolate chips all sank to the bottom when I made it, and of course the bottom then became the top, and so the top was mostly chocolate chip-cake and frosting, and the bottom was just regular cake. Other than that it was nice, I just think that if I made it again I'd use mini chips to lessen the chance that they'd all sink.

The Best Gluten Free Brownies Ever...Seriously

Pretty good!... nice and fudge-like. I'm not an experienced gluten-free baker, so I was worried when I saw how sticky and difficult to spread the batter was, but I guess that's typical, because it came out well. I didn't have teff flour but I used brown rice flour instead, and that didn't ruin it, thankfully.

This is some good stuff... I used about a cup of coconut milk and 2 of regular... and also less butter because coconut milk has a decent amount of fat.

Avocado Dessert

It was good, but very sweet, which I guess is necessary to keep the avocado flavor from overwhelming it. I think this works best as a fruit dip or topping, rather than eating it straight.

Mom's Buttermilk Pancakes

Yummy! I used whole wheat four, so I added a bit more buttermilk so they wouldn't be too thick. I also added a bit of sugar, but that's not too necessary if you have a good topping. I'll keep this recipe around!

Stuffed Peppers My Way

This is such a good recipe! I never would have thought to add feta to stuffed peppers. I usually add some mushrooms, and use wild rice instead, but it comes out just fine. Another interesting thing to try is adding a couple spoonfuls of hummus to the rice mixture - that thickens it a little and adds more flavor (not that it needs more - I just like the texture).

Zucchini Patties

Great idea for excess zucchini! My sister and I loved these. I added some mushrooms and garlic to the recipe, then had them with ketchup after cooking - very yummy!

Orange Chicken

This was sooo good! I baked it for a little longer but the chicken was still very tender. I don't like stuffing, so I used seasoned breadcrumbs, which do somewhat overwhelm the orange flavor, but I also squeezed the juice of half an orange over the chicken right before baking, and I think that helped. This is especially good with almond wild rice on the side - great combo!

Almond Wild Rice

This is a great dish! I wouldn't have thought to cook the different kinds of rice for different times, but that worked out well. I didn't use raisins, but I added some chopped green onions and mushrooms to the simmering rice and it was quite yummy. One thing to be careful of is browning the almonds too much (i.e. don't get distracted on facebook while they're cooking), but they weren't burnt. I paired this with some breaded orange chicken breasts, and it made a great combination, as well as yummy leftovers for the next few days!
