Southwestern Roasted Corn Salad

Reviewed: Sep. 5, 2010
Really so much better than I thought it would be. Great dressing! I broiled my onion since I like carmelized onion.

Turkey and Quinoa Meatloaf

I did not care for this. Neither did my daughter. My husband didn't think it was "that bad". Not making it again!

Butternut Squash Soup with a Kick

Reviewed: Aug. 13, 2010
I loved this soup! I needed more chicken broth to boil the squash in it. Maybe I had a larger squash? We like our food on the spicy side, so I added more jalapenos and some cayenne pepper. Very rich and creamy tasting. Didn't need the sour cream... but spinkled some croutons on top for some added texture. Will make again.

Chili-Lime Chicken Kabobs

Reviewed: Jul. 25, 2010
Really good. I was a little surprised how much flavor it added to the chicken. I doubled the marinade to make sure it coated everything. Will use it again! Even my picky teen loved it.

This is a great recipe. I added fresh onions, zucchini and bell pepper. Better than the local chinese food place!

Chicago-Style Pan Pizza

Reviewed: Apr. 14, 2009
I added fire roasted tomatoes (instead of traditional), fire roasted bell peppers (I just cooked them under my broiler), olives, and fresh garlic and herbs. I've tried to make this with my own dough, and it never seems to work that well. I tried Pillsbury Pizza Dough last night.. it was great, and I'm not normally of a fan of pre-made foods. I also sauted my garlic in some olive oil, added a tiny bit of the juice I drained from the tomatoes, a little bit of tomato paste, and more fresh herbs.. then added to the tomatoes before putting on the pizza. WONDERFUL.

Easy Slow Cooker Ham

Reviewed: Apr. 14, 2009
Turned out great. I didn't have any cider, so added apple juice and cider spices. Very juicy. I never removed the cloves.. so I surprised some of my guests.. next time I'll take those out before serving. :) I'll make this every time I make ham from now on.
