Stewed Cabbage

Reviewed: Feb. 27, 2010
1/4 cup of butter was a bit too much, only needs about 2T. I made it without the stewed tomatoes (did not have them) and it was delicious.

Beer Batter Fish Fillets

Reviewed: Feb. 21, 2010
I let the fish sit in the batter for over 30 minutes and it was so delicious. Did not have a deep fryer, but the skillet worked great. Thanks.

Chicken Parmigiana

Reviewed: Oct. 31, 2009
Delicious. I fried the chicken first in a little bit of olive oil to crisp and brown the bread crumbs. Then I placed the sauce on the bottom of a baking dish, put the chicken in, and topped with sauce and cheese. Baked for 40 minutes @ 350 deg. I have also made this with turkey cutlets and people actually like it more than chicken. Thanks.

Tostones (Fried Plantains)

Reviewed: Sep. 27, 2009
I used green plantains, which I understood to be the correct ones for tostones and they were so goooood! I used a some garlic in the oil and seasoned with salt. I never had one before and I can't wait to make more.

Grilled Salmon I

Reviewed: Sep. 14, 2009
I loved the marinade, but the salmon came out dry and I had to add more soy sauce after I served it. After I added more sauce it was delicious and everyone agreed. Thanks.

Grilled Corn on the Cob

Reviewed: Aug. 25, 2009
My corn was already husked when I bought it so I placed it right on the greased (with PAM spray) grill and in 15 minutes it was done. Turn frequently and keep the heat on the lower side so it does not burn. The corn had char marks which was yummy and still juicy even without the foil or husk.

Smoked Sausage Kabobs

Simple and Tasty. Don't forget to soak wooden skewers in water or they will turn black and break.

Campbell's® Fish and Vegetable Skillet

Reviewed: Apr. 20, 2009
very good, but I would recommend starting off with some margarine spread (I use Smart Balance), add onions, garlic, carrots, and broccoli ( i did not have celery) then after five minutes, add 1/2 cup of water, a bullion cube, and a cup of wine (sounds crazy but it really adds flavor). Then after five minutes, I added some fish (cod) and cream of mushroom soup. I let that simmer for over an hour to cook down and served over brown seasoned rice. Never had more praise about fish.
