Grilled Chicken Thighs Tandoori

Finger-lickin chicken, I've made it twice now: once with boneless chicken breasts and on the grill, the second time with boneless thighs in the oven. The grill really makes a huge difference, but it was pretty good in the oven, too! Obviously boneless cooks a lot quicker, and tastes just as good!

Mulligatawny Soup I

Fantastic soup! I double the curry and add a little cayenne for some heat. Brown rice, of course, just have to simmer a little longer so the rice cooks through. Stretch it easily by just adding more broth at the beginning, and extra spices. My friends go nuts for this soup!

Slow Cooker Chicken and Dumplings

Absolutely delicious. I used the 2 cans of cream of chicken, and about 4 cups of chicken broth to cover frozen chicken breasts and a 16 oz bag of frozen mixed veggies (corn, carrots, peas, green beans). Added some rosemary, oregano, pepper, and used Bisquick-mix biscuits that I dropped in instead of the pre-made dough. I was kept late at work so the biscuits cooked on high for about 3 hours instead of my planned 90 minutes - still tasted awesome. I ate this for dinner for 4 nights in a row...maybe not my most varietal week of dinners, but delicious, filling, and pretty heathy!

Orange Pork Stir Fry

I substituted soy sauce for teriyaki - waaaay too salty, and the oranges weren't sweet enough to counteract it, have to try again.
