Lemon Cloud Pie II

Reviewed: Apr. 11, 2009
I am not even sure where to start with this review. I noted others and cut the meringue mix down by one egg white and it was still way too much, so I decided to pipe it onto parchment paper instead of putting it into a pie dish. When I tried to move it onto a serving dish it crumbled like crazy. How it would have been in a dish I can't imagine. I used key lime juice instead of lemon but the flavor was very thin and watery - it had no depth to the flavor. I played around with it and added more lime and a little more liquid sugar but it just ended up like some nasty instant pudding mix. I am going to crumble the meringue and fold it into whipped cream and serve with strawberries. Taste good but not the special pie I wanted for Easter. Gonna go now and make Chantals cheesecake! Sorry bout this but it is an expensive mistake.

Prize Winning Baby Back Ribs

Reviewed: Jul. 5, 2009
I am English and my hubby is from the South so in our house he is always the one to do ribs (not a traditional thing in the UK at all). Yesterday was 4th July and he was working so I decided to treat him with ribs as a surprise. I followed the recipe and the advice I saw from others and it was fab!! He was so surprised and pleased (maybe even miffed that I did so well. LOL). The top rack on our bbq does not work well though, and so could not cook them that way. Instead I put 4 medium potatoes on the grill and laid the ribs on top of them. It kept the ribs away from direct heat until the last 20 mins or so, and then I scooped the inside out for mash! I think the flavor of the rub was just to my taste. Delicious.

Kielbasa Appetizers

Reviewed: Jul. 2, 2011
I downloaded this half an hour ago and thought it sounds nice enough and simple - BUT wow when I got it into the crockpot and tasted it - it was really terrific. The sauce was not too sweet and I licked my wooden spoon down to a splinter. Def a keeper and thats before I tasted it!!

Strawberry Pina Colada Pie

Reviewed: Sep. 30, 2011
I was looking for a desert I could feed to vegetarians who will not eat gelatin (animal parts boiled up for the cartlidge! sp??) which is in the instant pudding. So I followed most of the recipe but used a cooked coconut pudding which I made with coconut milk and I added some coconut cream I had in. I omitted the instant topping but added some whipping cream instead. I was concerned about it not setting so added just a little pectin too. I did not pour it into the crust until I cooled it and could see it thickening. Had it not thickened I was going to heat it up and put a little cornstarch in. Dressed with the toasted coconut and fruit it looked divine, and when I saw I had enough for two pies I halved it and made one for the adults with a little coconut rum. Yummy. Not too many instant puddings for vegetarians so mixed with different flavors this will become my stock desert for our friends.

Old Fashioned Onion Rings

Reviewed: Feb. 17, 2014
I loved these onion rings and made them pop just that little bit by adding some dried ranch dressing to the flour mix. Loved the tip about putting the battered rings on a cooling tray. Clean up took less than two mins while the burgers were cooking. They were super crisp and the onion was sweet and delicious. I am watching carbs but could not resist a couple of these. I used panko and did not add egg to the batter - just a little milk. They were perfect and hubbby was thrilled with them.

Bubble 'n' Squeak

Reviewed: May 29, 2014
I read many of the reviews and realized that many of them did not "get it"... in England this is a way of using left overs so comments about how long to cook the cabbage or potatoes are really irrelevant. Its whatever you have so long as it includes cabbage and potatoes. I actually love it when the potato gets all sqooshed down because then it browns and gets crusty. The best bit for me! Even if I am using bits of left over ham I will fry one or two slices of bacon to get the bacon fat. If you have to follow a fat free diet so be it but 2 rashers of bacon between 4 people really is not overkill. My Dad used to make this and he would add a knob of butter too to add even more richness. If you want to keep the fat to a minimum make the mix into little cakes and brush the bacon fat on each side.... just enough to give it that crusty brown top and bottom. Brussel sprouts is amazing mixed with this and bits of carrot give it a sweetness. In our house this was part of a breakfast or brunch that would include eggs. The lovely runny yolk on the little cakes reminds me of poor mans Eggs Benedict!

Shortbread Cookies II

Reviewed: Nov. 22, 2014
I am English and have been eating shortbread cookies all my life and without doubt this was the finest. Cannot wait to make another batch because I made some real rookie mistakes on this batch. I made some thick and some thinner (the thin ones were super super delicious... so crisp and melt in the mouth) but mixed them up on the same baking tray so the thin ones were cooked while the thick ones were not quite ready. Second mistake I tried to move them to the cooling rack too soon and the shape got messy. They really need about 5 mins on the baking tray before they are ready to be moved. On the second tray I made thumb cookies with lemon curd.... again it was lovely but I made the indentation too deep and when the curd melted it cooked almost through the dough. A centimeter more and there would have been a hole. The last batch were sprinkled with Heath bar bits but the cookie itself was so buttery and vanillary that the bits were lost in the mouth. I piped peppermint candy on top of some and that flavor was so distinctly different it worked much better. Just one more tip.... you have to work quickly with this dough or put it back in the fridge for a while. Honestly cant imagine being bothered making any other type of cookie ever again even though the thin ones were rather fragile and meant careful packing when I put them away. Might make the lemon flavored ones next time too.... so yummy!!

Birthday Bones

Reviewed: Dec. 7, 2014
I feel so bad rating this recipe so low but made them this morning and coud'nt wait to feed one to my little Otis.... now this is a dog who will eat anything.... apple core, raw carrots any scraps he can scrounge but he would not go near them. I warmed some peanut butter with water and brushed the biscuits to see if that would tempt him. No way! I dont know if he is so used to store bought snacks with a strong odor or what. I tried one and it was a bit bland for an adult taste but was certainly not horrible and you def got the flavor of peanut butter. I will repost if he changes his mind but as of now does anyone want about 50 biscuits? LOL
