Strawberry Pina Colada Pie

I was looking for a desert I could feed to vegetarians who will not eat gelatin (animal parts boiled up for the cartlidge! sp??) which is in the instant pudding. So I followed most of the recipe but used a cooked coconut pudding which I made with coconut milk and I added some coconut cream I had in. I omitted the instant topping but added some whipping cream instead. I was concerned about it not setting so added just a little pectin too. I did not pour it into the crust until I cooled it and could see it thickening. Had it not thickened I was going to heat it up and put a little cornstarch in. Dressed with the toasted coconut and fruit it looked divine, and when I saw I had enough for two pies I halved it and made one for the adults with a little coconut rum. Yummy. Not too many instant puddings for vegetarians so mixed with different flavors this will become my stock desert for our friends.

Kielbasa Appetizers

I downloaded this half an hour ago and thought it sounds nice enough and simple - BUT wow when I got it into the crockpot and tasted it - it was really terrific. The sauce was not too sweet and I licked my wooden spoon down to a splinter. Def a keeper and thats before I tasted it!!

Prize Winning Baby Back Ribs

I am English and my hubby is from the South so in our house he is always the one to do ribs (not a traditional thing in the UK at all). Yesterday was 4th July and he was working so I decided to treat him with ribs as a surprise. I followed the recipe and the advice I saw from others and it was fab!! He was so surprised and pleased (maybe even miffed that I did so well. LOL). The top rack on our bbq does not work well though, and so could not cook them that way. Instead I put 4 medium potatoes on the grill and laid the ribs on top of them. It kept the ribs away from direct heat until the last 20 mins or so, and then I scooped the inside out for mash! I think the flavor of the rub was just to my taste. Delicious.

Lemon Cloud Pie II

I am not even sure where to start with this review. I noted others and cut the meringue mix down by one egg white and it was still way too much, so I decided to pipe it onto parchment paper instead of putting it into a pie dish. When I tried to move it onto a serving dish it crumbled like crazy. How it would have been in a dish I can't imagine. I used key lime juice instead of lemon but the flavor was very thin and watery - it had no depth to the flavor. I played around with it and added more lime and a little more liquid sugar but it just ended up like some nasty instant pudding mix. I am going to crumble the meringue and fold it into whipped cream and serve with strawberries. Taste good but not the special pie I wanted for Easter. Gonna go now and make Chantals cheesecake! Sorry bout this but it is an expensive mistake.
