Stuffed Pork Chops with Gorgonzola and Apple

This really is delicious. I prepared this for a dinner party of eight, with broccoli and mashed potatoes. Since I like simple- I thot it time consuming to make each individual "pocket". Next time I will just take a braised pork loin, slice it and add that wonderful cheese/apple/thyme suace on the top. This is not your usual roast & potatoes and I will be eating this again.

Restaurant Style Egg Drop Soup

Yep! I won't be buying egg drop soup at the restaurant anymore. So easy, and tasty. I do not bother using food color.

Slow Cooker Texas Pulled Pork

I get great compliments on my pulled pork, and I have used several different recipes- this one is good. I mixed all the ingredients before adding them to the pot. The pork roasts I have used lately are on the fatty side, and since I live in a very rural area, I buy what I can get. Anyhow, I refrigerate the crock pot after the cooking process (usually overnite) to make sure I can get most of the fat out of the meat when I shred it, as well as the layer of fats congealed on the top of the juices. Makes for a much leaner, richer tasting sandwich filling. Toasting the inside of the buns in a skillet makes a world of difference as well. This is an ez ez crowd pleaser.

Easiest Applesauce Cake

Pretty good for a box cake. I doubled this, used 4 cake rounds. Apple juice instead of water.6 eggs instead of 8. I skipped the Pudding Mix, so I used alittle less water. Also added half of one diced apple to the dry mix, and some walnuts.

Whole Wheat Couscous Tabbouleh

I like to soak my grain in chicken broth for added flavor, and I use about the same about of fresh parsley as grain to add even more nutrition, as if it needs more of that! Great stuff!
