Chunky Cranberry Fluff

My mom started serving this at Thanksgiving and Christmas as an alternative to the lime jello mold thing my grandmother used to make that no one liked. It's delicious! The tang of the cranberries combined with the citrus pineapple and sweet whipped topping is delicious with turkey or ham. Always make the day before and just pop in the fridge until dinner time, and hope the kids haven't been into it so there's enough for everyone!

Spanish Rice II

Making this was magical in the sense that it created something I'd had no idea how to do; Mexican restaurant rice! I love this rice, it's half the reason I go out for Mexican, and now I know the secret. Thank you!

Clark's Quiche

I loved this, and not only for the mix of flavors, but how gorgeous it came out. I've been making quiche for over two decades and had been using the same old recipe. I am so glad I tried something new, thank you Clark! This would also be a lovely gift for all of those times when we need to help someone out with a pre-cooked dish, or for a romantic picnic for two. An all-round winner!

Spicy Orange Bison Balls

This was amazing. I too used sriracha and added a single-serving size of mandarin oranges because they needed to go, and a smidge of ground ginger because I take every opportunity to use it. I used the ground pork I had on hand and the meatballs cooked up with amazingly little fat left. The simmer time was magic, the sauce thickened up just like you said it would. It was delicious as well as pretty to look at, and so easy. I would never have tried something like this without you. It's now a regular recipe for both home and potlucks. Thanks, Chef John!

The Best Banana Bread

This recipe was so easy, I couldn't believe I was making banana bread, ME, and it turned out heavenly, so very delicious and moist. I used brown sugar as someone suggested because I love the flavor. I made it in a muffin tin w/cupcake liners so I could share. I will make this all the time now. Thank you!

Cornbread I

For some reason I can't make a pan of cornbread to my taste and that doesn't fall apart unless I use two eggs. So I did with this recipe, and it's perfect every time, flipped over onto a plate out of an ancient cast iron skillet, crusty on the outside, dense and delicious on the inside. I like it best just out of the oven, with real salted butter. I'm going to try a different corn meal next time, because I think that's been my problem. This recipe is what my momma says she makes, and of course it's momma's cooking that I'm craving now that she's moved 2000 miles away. Come back home to Arkansas, mom!!! Great doings, Nancy! Thank you.

Philadelphia Style Butter Cake

While not the fanciest looking dessert, this is a Southern staple and you can usually find them at family gatherings and potlucks if you're lucky. The first layer is supposed to be pressed into the pan, with a raised edge. Siblings have been known to fight over the corners. The gooey topping is supposed to be creamy, rich and very sweet. Not recommended to those without a sweet tooth.
