Balsamic Roasted Pork Loin

So good. I followed the directions exactly and I didn't even taste a hint of vinegar. I did marinate about 20 hours. My meat was more than three pounds so it did take a little longer to cook. However, so easy and really basic!

Charlie's Sweet Island Brussels Sprouts

Best. Brussels. Sprouts. Ever. Not bitter at all, full of flavor! I may never roast them with boring salt and olive oil again! Made the recipe as written, but reduced butter in half only because I didn't think I had 2 lb. ....

Make Ahead Lunch Wraps

Excellent. Not sure why some people think it doesn't have flavor. My guess is that they are not using the pepper jack cheese. (I used the full pound - delicious.) I skipped one can of black beans and all the pintos (don't like them.) I accidentally bought the spicy rotel, so that might have given it extra kick. It was really fabulous, and I look forward to having it over the next few days (I don't think they'll last long.) Only thing I might do is add extra corn.

Bow Ties with Sausage, Tomatoes and Cream

I used crushed tomatoes and a basil flavored rotini pasta - it was excellent. A little spicy, but I think primarily due to the Italian sausage I selected. Great recipe! I didn't have any problems with it thickening up, but I used the entire 1-1/2 cups of heavy cream.

American Shepherd's Pie

My husband LOVED this. Per others' suggestions, I used cream of mushroom soup, skipped the thyme (I don't like it much) and substituted colby jack. I cheated and used frozen prepared mashed potatoes, with sour cream and chive flavoring and all. It was really easy, and my husband is a big fan of it!
