Cranberry Muffins

Reviewed: Nov. 22, 2011
These were SO good- the spices are perfect! I used the 1/3 cup of canola oil, and increased the OJ to 1/2 cup like others had suggested. I didn't have any orangs for the orange zest, but I will make sure I have it next time. I will definitly be making these over the holidays. Thanks for a great muffin recipe!

Apple Pie Muffins

Reviewed: Oct. 28, 2011
I hate to give anything a bad rating, but these were really disappointing. I read and reread the recipe, and then read some reviews to see if anyone mentioned the absence of baking powder, but no one did, so I went ahead and tried them. I used extra spices and cut down on the sugar as some had suggested. I was even very careful in mixing so as to not overmix. Well these didn't hardly rise at all, they were very dense and almost gluey in consistency. From now on I will stick to my basic tried and true muffin recipe.

Easy Quiche

Reviewed: May 6, 2009
Fabulous! This was the best quiche I've ever made- and I've made a lot. I don't know if it was the baking mix that gave it such a nice fluffy texture, but it was great. I used a ton of fresh spinach, and although I love spinach, you really couldn't taste it, so the kids devoured it. My daughter even asked to take some for lunch the next day. Thanks for this awesome recipe! This is all I will use from now on...

Rolled Flank Steak

Reviewed: Aug. 1, 2008
I made this for dinner last night and it was awesome! I'm sure it would have been even better if I'd followed the directions exactly, but I didn't have all the ingredients on hand, so I had to improvise a little. And I only marinated it for 1 hour before cooking and it was still great. Can't wait to try this again- thanks so much for sharing this recipe!

Crumb-Coated Chicken Thighs

Reviewed: Jun. 11, 2008
The coating had a really nice and different flavor, and the house smelled wonderful while it was cooking! My only problem was there wasn't enough coating to cover all of the chicken pieces- next time I will probably double it. I dipped the chicken in some buttermilk that I had left over from another recipe before I coated it, and it turned out really well. I think this would be even better with chicken breasts- so I'll definitely be trying it again. Thanks for the recipe!

Maple Roast Turkey

Reviewed: Apr. 21, 2008
I'm assuming this is the same recipe I got out of the Allrecipes Cookbook, although the submission names are different. Anyway, it was FABULOUS! I just made it last night with a turkey from Christmas that I thought I'd better use. This is the first time I've cooked a turkey in years- and this recipe seems pretty foolproof as I had to make quite a few changes. First off , read the directions all the way through- which of course I did not and found myself making the butter while I preheated the oven. Besides using plain apple juice, Aunt Jemima syrup and Herbs de Provence instead of the fresh herbs called for, as these were what I had on hand , and then putting the mixture in the freezer to hasten the hardening process as I had only 31/2 hours til dinnertime. After 30 min., the butter was somewhat hardened, so I proceeded with preparing the turkey- roasted it for the desired amount of time.( didn't add the vegetables to the pan, but added the chicken broth) The house smelled wonderful while it cooked. The turkey came out gorgeous and so tender and moist! And the gravy was great- a nice change from plain turkey gravy. I loved it, my family loved it- and it was such a forgiving recipe that it still turned out great despite all of my screw ups. I can only imagine how great this would be if you followed the directions properly and used all of the correct ingredients, I will definantly be making this again. Thank you so much for sharing this awesome recipe!

Blueberry Dump Cake

Reviewed: Jul. 14, 2007
What a waste of my good blueberries! I followed the recipe exactly, and ended up with dry cake mix on top with clumps where the butter had pooled. I mixed it all up and put it back in the oven to see if I could salvage it, and ended up with a big pile of overly sweet blueberry mush. Oh well, maybe it's all in what brand of cake mix you use, but I'll never try this again.

Broccoli Chicken Casserole II

Reviewed: Jun. 28, 2007
This is basically Chicken Divan - which I practically grew up on as it was one of the few dishes my mom could cook! I only used one can of the soup- I have also substituted cream of mushroom, and upped the curry because I love curry.Topped with crushed Ritz crackers and it was fabulous! Even better the next day.
