Italian Wedding Cookies III

My husband loves these cookies. I only made few minor changes - half vanilla extract, half almond extract; hand crush sliced almonds so that we can see the almond when eating; instead of rolling in the confectionate sugar (which i did during my first try but turned out to be too sweet and messy), I simply sprinkled the sugar on top with a mesh coffee filter/sieve. They look a lot prettier.

Tomato Chicken Parmesan

Let me just say my fiance finished his plate (with pasta and broccoli) in less than 5 minutes. I too didn't pan fry but baked the chicken breasts for 20 minutes. Also I borrowed the idea from another recipe and spread a thin layer of mayo on the chicken in lieu of using eggs. Lastly, I marinated the chicken with salt, black pepper, garlic powder, parprika and a little canjun spice and let them sit in the fridge overnight before cooking.

To Die For Blueberry Muffins

My fiance LOVES these. I only made some minor changes - 4 TBS of melted butter instead of vegetable oil, 4 oz of unsweetened applesauce in place of milk, 1 tsp of vanilla extract, and I skipped the topping completely. They are perfect for weekend breakfast and definitely not too sweet.

Raspberry and Almond Shortbread Thumbprints

Just made these last night. I halved the recipe but still made 30 decent size shortbreads. I lowered the oven temp to 325F, and baked them for 15 mins. I did put the dough in the freezer for 15 mins before baking and they all turned out great. No spilling at all.
