Zucchini Souffle
My husband didn't even want to try this because he "hates eggs". I added crisp bacon and cheddar to the second one I just took out of the oven (at HIS request!). I think his initial comment was, "AWESOME".

The Best Red Enchilada Sauce
This is the only recipe I use now. I make double batches and freeze the extra for work nights. Absolutely FANTASTIC!!

Shrimp Provencal
So sorry, but we didn't love it. Seemed bland and blah. I just can't place what would improve it.
