Southern Fried Cabbage

Very good. Warning, All the ideas in the comments are good but this dish is Best kept simple. I made mine with red onions and some balsamic vinegar. Kind of like the recipe for "Pancetta Fried Cabbage". It tasted kind of German and would be great with fried potatoes.

Seafood Cioppino

So delicious. Simmer slowly for a long time. I changed a lot because I was looking for a recipe for fish stew. So I added 4-5 cups of water and 4 stalks of celery. I used the spicy V-8 that reviewers recommended but the soup is so flavorful that I wonder if it matters. I left out the wine. I used only fish, Tilapia worked wonderfully, making this actually a very inexpensive dish. Buttered (not garlic) bread on the side for balance.

Thai Spicy Basil Chicken Fried Rice

Cook the rice 'al dente', not soft, and be sure to REFRIGERATE it. That's the secret. Use enough oil to coat all the rice grains, which may be less than the recipe calls for if your add-ins are oily. Even if you mess it up, this is sure to be a hit in your home because you adjust to your local tastes and markets. Just watch the proportions and you're good.

Baked Tofu Bites

With tofu baking it really is your best bet. Well done cubes are awesome as a snack food. I like to make oriental food with vegetables only, then offer a choice of prepared-ahead meats (ie: deep fried pork, cubed broiled chicken, plain boiled shrimp) and then these tofu cubes. Season them like you would curly fries or

Balsamic Roasted Red Potatoes

Bistro flavor. see the comments and use them for your tastes. Use red onions, finely chopped. Skip step one completely for firmer potatoes and save pans. Just put the vinegar in at the first and cover with foil. I wonder what kind of potato salad these leftovers would make? yummy German style i'll bet.

Italiano Chicken and Pasta Medley

Good proportions. Even better the next day. When you simmer the pasta, don't boil it and watch it closely because there is just enough liquid. Since I made this out of what i had in the cupboard, I used a big can of tomatoes and a small can of broth to equal the same amount of liquid. More seasoning, maybe two TABLESPOONS of Italian seasoning, salt and black pepper of course. Don't forget the cheese, it really makes a flavor difference.

Tofu and Cheese Stuffed Shells

The filling is excellent, mild, perfectly textured and tasty. Be careful when adding or substituting vegetables that you drain everything very well. I recommend blending the tofu, ricotta and egg until smooth before stirring in the carrot mixture and cheeses. I used 2 jars of spinach spaghetti sauce and pepperoni crumbles and tons more cheese. Makes more than 4 servings though - maybe 6.

A Twist on Pasta Salad

Perfect basic recipe for success. Thank you! I've made this three different ways now based on what is in my garden. My best so far is 2 leaves fresh basil , 1/2 julienned red onion and less pepper, and 8 oz. Ciliegine mozzarella balls. I like to chop the broccoli up really small and the tomatoes really big. Undercook the noodles and go ahead and marinate this one.
