Ten Minute Enchilada Sauce

Easy and delicious! We searched long and hard for the perfect enchilada sauce. We tried several recipes, several brands of canned and nothing satisfied us until we tried this recipe. This is definitely our idea of perfect!

Cube Steak Stew

This had WAY too much black pepper in it for our tastes. If I want to add that much kick I would choose to do it with something other than plain black pepper. All we could taste was the pepper and we wanted to try a stew.

Old-Time Popcorn Balls

Something didn't go right. They never got hard, they stayed mushy and the mixture ran off the popcorn. I followed all the instructions. If anyone has an idea why that occurred, speak up. I like the idea of molasses instead of corn syrup, that's why I tried this recipe over all the others.

Overnight Cinnamon Rolls I

These were great. The only thing I changed was to double the cinnamon and I will probably add even more to the bread dough next time. I also think I will brush the dough with butter before adding the cinnamon and brown sugar next time. But these were easy to make and everyone loved them.

Chicken Scampi II

I thought this was excellent. I only used 1/4 cup of butter and 2 tablespoons olive oil making up of the loss of liquid by adding 1/2 cup of chicken broth. I served over pasta and it was superb.

Avocado Egg Salad

Wonderful! Not being a huge egg salad fan I wanted something different that had very little mayo. I tried this recipe using only enough mayo to make is spreadable which is not very much because the avocado helps it bond together. I also left out the onion and pickles. I would never have thought of combining avocado and egg salad but this recipe is wonderful. I have made it several times including when having lucnh guests and I will continue to make this as I really love it!

Super Italian Sub

Excellent! The only thing I changed was to substitute one of the meats and use avocado instead of bell pepper. This was surprisingly wonderful! I am not big on sauces and dressings and almost didn't make this sandwich for that reason but I am SO glad I did. It was great!

Fluffy Biscuits

These are delicious and easy biscuits! Following reviews, I use half butter flavored shorting and half butter and after kneading I scoop them out using an ice cream scooper or spoon instead of rolling and cutting. They turn out great and I won't be using any other recipe from now on.

No Sugar Apple Pie

This was my first attempt at an apple pie and it came out wonderful. I did not simmer the apples as long as suggested and I used two different kinds of apples to add flavor. I also could not find unsweetened concentrate so unfortunately mine has some sugar but it came out tasting great. As soon as find unsweetened concentrate I will make this again.

Absolutely wonderful! I used tilapia I had on hand and due to other reviews added 1 tsp parsley, 1 tsp garlic powder and layered the cheese with the rest and It was incredible. We loved it!

Pickled Watermelon Rinds

I grew up canning and eating watermelon pickles at my grandmother's and great-grandmother's. They have always been my favorite pickles. When we make them though, we never brine them overnight or pre-boil them in water. Just put the vinegar, spices and rind in a stock pot and boil until translucent, about 1 1/2 to 2 hours. Then put in about six pint jars and seal. This a lot faster and easier.
