Hershey's ® 'Perfectly Chocolate' Chocolate Cake

Wonderful cake! Everyone loved it. I made two cakes, a cake using regular AP flour and another using gluten-free flour. With a few additions to the GF one (extra cocoa and milk) it was also very delicious. Both were awesome cakes. I frosted them with cream cheese frosting II from this site and also pressed pecans around it. Yum

Baked Zucchini Chips

Yumm-O! I really liked these and I've never been a big fan of zucchini. Used egg substitute in place of the egg whites and added garlic powder per some reviews. I also sliced them thinner and baked them for an extra 5 minutes on each side for some extra crunchiness. They were wonderful with some spicy ranch for dipping. Glad I bought some extra zucchini!

Golden Rum Cake

Chantal's New York Cheesecake

I made this using gluten free grahamn crackers and Bob's Red Mill Gluten free flour (1/8 cup instead of 1/4 because GF flour tends to be a bit heavy). I then baked it in a 325 degree oven for one hour, switched off the oven and left it in there for about 4 hours to cool. It cracked, but I think that was my fault because I couldn't help peeking AND I forgot to run a knife around the edges before cooling. Instead of sticking it in the fridge, I used the freezer since I needed it sooner. Everyone loved it and there wasn't a crumb left! I thought is was just "okay", but I'm told I'm my worst critic.

Mini Pumpkin Butterscotch Muffins

Yum these are so good. I made regular sized muffins instead of minis. One thing i hated ws that the buterscotch chips oozed out of the muffins, but they were still good.

Italian Chicken Sausage Risotto

Don't know if I changed it too much. Ehh who am i kidding? I think mine was just based on the idea LOL. I love my risotto creamy, so I cut down the rice to one cup and 6 cups of broth. I didn't use white wine but am sure it would've been been better if I did. I also added spinach for extra veggies. I loved it.

Hummus Pizza

Very good. I used artichoke hummus on top of the Crazy pizza dough from this site. Instead of broccoli, kiser spinach and sprinkled some crushed red chili pepper on top of the hummus. Turned out very well. Will definitely make again.

These are really good. I made mine gluten free, using a GF flour blend and adding a teaspoon of xantham gum. I also used mini chocolate chips instead of the regular sized ones. Will definitely make again.

Spiced Banana Bread

OMG absolutely delicious! I followed the recipe directions, but used all brown sugar since I was out of white AND I added a tiny bit of oil (so small, that I didn't even measure it, probably about a tablespoon). The mixture had just seemed too thick, but the two loaves came out perfect. They ended up baking more like 60 minutes. After the first 45 minutes, I lowered the oven temp since I was worried that the edges were getting too brown. The first loaf was completely gone in no time. Will definitely use this recipe again. Loved that it was not so "plain" as traditional banana bread recipes. Thanks.

Wow this is good stuff. I'm usually not a fan of cornbread..too dry in some cases. This recipe though, yum..not dry or overly sweet. Very good.

'So This Is What Heaven Tastes Like!' Cream Cheese Bars

So after a comparision, I've come to the decision that some recipes just weren't meant to ne "healthified." I made an 8x8 following the recipe ingredients and another 8x8 subbing in other ingredients. My so-called healthier version just didn't come close. Definitely stick to the recipe next time, just don't eat to many if I don't want to be bigger than a size 2. LOL

Homemade Black Bean Veggie Burgers

I used thawed green peppers from the freezer and egg substitute in place of the egg. I also use an ice cream scooper and scooped them directly onto a cookie sheet, topped them with plastic wrap and pressed down to flatten. Stuck the whole cookie sheet in the freezer and froze them before baking. The smell was delicious as well as the flavor. Baked them for about 15 minutes, flipped them and baked for another 15. The only bummer was that a couple fell apart when I went to flip them. Ate them with a little ketchup and some extra hot sauce. Will make again.
