Healthy Banana Cookies

I'm not usually so harsh but these were not good. Tried them without modifications.... I then modified as per some reviews; added some cinnamon and nutmeg...Not even adding chocolate chips could save these.

Southwestern Hominy

This was pretty good. Added some cooked, diced chicken and used a can of tomatoes with chiles in place of the tomatoes. I also added extra cumin and pepper since I love that stuff :) Enjoyed it as a quick main dish. It almost tasted like an enchilada.

Slow-Cooker Posole

Growing up, I use to watch my mother make it from scratch. Watching her cut the meat and skim the top of the soup/broth just grossed me out. Anyway, I decided to try a "quick" way of making posole since my BF was craving the stuff. I have to say that this wasn't bad; it was pretty good. I felt kind of weird eating it at first because I kept thinking that I was drinking enchilada sauce, but I got over it. This recipe makes A LOT of it, so thinking I'll half the recipe next time.

Tomato Curry Chicken

I liked this recipe. Have played around with it by adding more curry and cayenne pepper on the days I want something spicy. Since I don't like alcohol, I use chicken broth instead. I've also tried this sauce on fish instead of chicken and it always comes out great. Really yummy with feta sprinkled on top.

Golden Rum Cake

Very yummy. I ran out of the dark rum and had to pull out the Bacardi 151, but the boys loved it even more. Simple and good.

Amish Friendship Bread Starter

The chain letter of baked-goods. The end result is yummy, but it's a pain to get it there. Living in a small town, you run out of people to give it to. Is there a quicker way of getting the bread without having to annoy any more families?

Margarita Cake

No orange cake mix so I used Lemon. I used an already prepared Margarita mix. Turned out great. I even tried it with Strawberry Margarita mix. Next time I think I'll try it with a regular yellow cake mix.

Impossibly Easy Coconut Pie

I don't know where I went wrong, but it didn't come out right. When I took it out of the oven, it looked great, but as it cooled, the middle sank in...not very pretty. It looked nothing like the picture, not even when I cut into it. It was flat and tasted kinda eggy. Won't make it again. I was nice and gave it two stars because I liked the crispy browned edges.

Perfect Cheesecake Everytime

Followed the recipe and cooked it for 30 minutes, then left it in the oven overnight per one of the reviews. It just didn't look cooked enough in the morning.After stressing over the appearance, I opted to chill it and hope it firmed up well. You'd think spending the entire day in the fridge would help...it didn't. When we sliced into it, it was too soft and didn't retain shape, more like pudding. The flavor was great just not the "look."

Homemade Black Bean Veggie Burgers

I used thawed green peppers from the freezer and egg substitute in place of the egg. I also use an ice cream scooper and scooped them directly onto a cookie sheet, topped them with plastic wrap and pressed down to flatten. Stuck the whole cookie sheet in the freezer and froze them before baking. The smell was delicious as well as the flavor. Baked them for about 15 minutes, flipped them and baked for another 15. The only bummer was that a couple fell apart when I went to flip them. Ate them with a little ketchup and some extra hot sauce. Will make again.

Baked Zucchini Chips

Yumm-O! I really liked these and I've never been a big fan of zucchini. Used egg substitute in place of the egg whites and added garlic powder per some reviews. I also sliced them thinner and baked them for an extra 5 minutes on each side for some extra crunchiness. They were wonderful with some spicy ranch for dipping. Glad I bought some extra zucchini!

Cinnamon Griddle Cakes

Reading the reviews, I expected them to really taste like a cinnamon roll, but I was disappointed. I didn't like them as much as I thought I would. They were kind of heavy and the batter didn't really spread; it just dropped in globs. Maybe it was my fault because I didn't use the corn syrup. I don't think that would have made much of a difference in the lack of cinnamon roll taste, but maybe in the 'spread-ability' yes. I won't be making these again though. I'll just stick to my usual pancake recipe and add some cinnamon.

'So This Is What Heaven Tastes Like!' Cream Cheese Bars

So after a comparision, I've come to the decision that some recipes just weren't meant to ne "healthified." I made an 8x8 following the recipe ingredients and another 8x8 subbing in other ingredients. My so-called healthier version just didn't come close. Definitely stick to the recipe next time, just don't eat to many if I don't want to be bigger than a size 2. LOL

Pecan Tassies

Not what I expected. I've had pecan tassies that are delicious; these are just ok. I didn't like the consistency of the filling and I think it needed something else. The dough itself was pretty tastless...as I was making it I kept thinking that there should be something else in it, but I still stuck to the recipe stated. I think I'll keep looking for other recipes.
