All American Apple Pie

Reviewed: Dec. 14, 2010
This was delicious and the crust is SO easy. If you want to use a store bought crust for this one--don't--this crust recipe takes less than five minutes to mix and press into the pie pan--just be patient and press it until it's spread out evenly and up onto the edge of your pie pan. I did use granny smiths--leaving the sugar as written--b/c that's what I had! And I added a bit to the topping--which is GREAT as written-- but for personal preferences I added chopped pecans and a touch of cinnamon. I was skeptical of a crumb topping w/o brown sugar, but this recipe is good as is. Like any pie, I do recommend covering the crust edges w/ a pie shield or foil, taking it the protection off for the last few minutes of baking, if necessary. My apples weren't ready after 45 minutes, so, I covered the whole pie loosely with foil for another 10 minutes or so and the apple juices began to run down the side of the pie tin beautifully! :) Hands down, this is the best crumb top pie I've made. Now I have to be really motivated to bother making my double crust pie as it entails a rolling pin!!!

Fluffy 2-Step Cheesecake Minis

Reviewed: Nov. 13, 2010
Tasted great; super easy to make, and pretty much fool proof. I made vanilla ones following the recipe exactly, and chocolate ones using chocolate pudding in place of the cool whip. I served them at a bridal shower to rave reviews.

Creamy Au Gratin Potatoes

Reviewed: Apr. 3, 2010
Wonderful! I made the recipe for 16. The only change I made was to mince the onion and sauté it w/ garlic. Yum! Just as a note, don't worry if your sauce doesn't get really thick--you can add a bit of corn starch if you are really concerned--but, as it bakes the dish that you thought was a soupy mess comes together just great. :)

Slow Cooker Ham

Reviewed: Apr. 3, 2010
This is so easy, and it's delicious! I do mix a little pineapple juice with the brown sugar--for flavor, not b/c you need the moisture. The only thing I would warn about: cook time. The first time I did this was w/ a 10 pound spiral-cut, I intentionally lowered the cook time to 4 hours--it was still more than I would have liked. Now when I use this recipe I just feel the ham (I have to use foil over the top b/c the lid won't fit) until it's warm all the way through--about 3 hours on low, 1 1/2-2 on high. Anyway, hopefully that helps someone! :)

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Jul. 24, 2009
1-The chicken is GREAT. 2-I don't care for Frank's Buffalo sauce...they add paprika, and it's too sweet for my tastes. So, if you want authentic Buffalo sauce, I recommend adding butter to Frank's original, OR, you can just use your fave type of buffalo sauce! 3-the sandwich...not for me and my husband. We tried eating it with the rolls, and didn't like it at all, SO, since then I serve it like a a burrito, with mexican rice, sour cream, etc. and we love it like that. 4-the chicken is great, super easy and delicious....so...make it and serve it however you like!! :) 5-we used leftovers to make buffalo chicken pizza like many other reviewers...also delicious! :)

Key Lime Pie VII

Reviewed: Jul. 7, 2009
So good. So easy (if you cheat like me and buy bottled key lime juice!). I use lemon or lime zest depending on what I have around. Try this recipe if you haven't; it's delicious and perfect if you're crunched for time!

Lime Chicken Soft Tacos

Reviewed: May 24, 2009
not close to enough flavor for us. added more lime and a splash of tequila, still not enough flavor. we did use the leftovers for quesadillas, and the chicken was appreciated more that way. but back to our usual chicken tacos we go!

Sweet, Sticky and Spicy Chicken

Reviewed: May 15, 2009
Soooo good. Based on other reviews, the first time I made it I added more hot sauce--we like things spicy, but I definitely overdid the spice--when I put the sauce into the pan the spiciness filled the apartment (and our lungs. oopps). Anyway, so you don't end up unable to finish your meal due to the intense burning in your throat...make it spicy to taste! Trader Joe's crushed ginger and garlic are perfect for this recipe. I dice the chicken breasts and dredge in a flour/garlic salt/pepper before browning (would recommend this), and I make double the sauce. :) You will like this--you can adjust it to your tastes; it's quick and easy and delicious! Oh, and I've used Karo syrup in lieu of honey (ran out); it was fine as a substitute, but the honey adds a slightly heartier flavor. :)

Very good. Forgot to make the dipping sauce--I was bummed b/c I was looking forward to it! Next time. My husband and our guests like them more than I did. :)
