I love these beans! I make them every couple weeks. I leave out the jalapeno because it's a little hot for my daughter.

Fluffy Whole Wheat Biscuits

They tasted ok, but mine weren't fluffy at all. I reverted back to my original biscuit recipe and just subbed half wheat flour and a tad more baking powder with good results.

Ranger Cookies I

I made these for my dad for Father's day as he is a big coconut fan and I'm running out of new things to make him. These had a great texture - delightfully chewy yet had a little crunch. After reading the reviews I reduced the flour to 2 cups. This makes a lot of cookies - about 7 dozen with my standard cookie scoop if I recall correctly, so you may want to halve the recipe.

Sloppy Joes II

This is a great, easy way to get dinner together with things you already have on hand. I've made them with and without the bell pepper and can't tell that much of a difference. I use fresh garlic instead of the powder. They won't replace my regular home-made sloppy joe recipe, but these are very good.

Gumbo Style Chicken Creole

I love this recipe. I followed it exactly as written. I enjoyed the addition of mushrooms since I'm not an okra fan. So easy and even better the next day. Served with brown rice and French bread.

Crustless Spinach Quiche

This is a great basic recipe. You can use any veggie and cheese that you need to get out of your fridge. I like to use 2 cups of cheese and 4 eggs. I often omit the oil and cook the onion with a slice of chopped bacon. I've made variations of this for breakfast, lunch and dinner with great results every time.

Taco Seasoning

This is the only taco seasoning my family will eat now - it's a keeper! I prefer cooking fresh onion and garlic with the meat and omit the garlic powder and minced onion. I do add 1/2 teaspoon kosher salt to bring out the flavors a little, which is still a lot less sodium than the packets.

Slow-Cooked Swiss Steak

This recipe needs more flour. The sauce was very runny. I added some shredded carrot. Next time I will use 1/4 cup flour and add some basil, oregano, and garlic for more flavor. Meat was very tender and tasty, just needs a little sprucing up.

Chuck's Favorite Mac and Cheese

The sour cream flavor was too strong, and there were still bits of cottage cheese after baking which were not very appealing (yes, I used small curd). The sauce was also a little thick and didn't coat the pasta well. I plan on using milk and ricotta next time to make the sauce. Good start to make my own recipe for oven mac-n-cheese.
