Fresh Pineapple Upside Down Cake

Reviewed: Jan. 8, 2011
The cake was delicious; however, it didn't look very appetizing. I baked it just as instructed but the cake was a bit flat. The topping was great, though. I recommend doubling the ingredients and using 4-5 eggs. Also, canned pineapple works just as well as fresh.

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

Reviewed: Apr. 18, 2010
This was a very tasty and quick meal to prepare! I think it's important to saute the sausage, chicken, and potatoes separately so that you can control the amount of fat and liquid that goes into the dish. I did modify the recipe a bit. Whenever I use olive oil in an oven dish, I will always add onions and crushed garlic for added flavoring. It came out just as I expected it to. I also used a seasoned garlic salt which only enhanced the flavors. Otherwise I followed the recipe just as written. My guests are always impressed with my dishes; and it only takes a little tweaking here and there to call it your own!

Spinach Stuffed Chicken Breasts

Reviewed: Dec. 22, 2009
This meal was very tasty and a great alternative meal for large crowds. I decided to use ricotta cheese instead of mayo, and I used breadcrumbs and Parmesan cheese to make the mixture thicker. Adding to the mixture plenty of fresh baby spinach, cooked slightly then drained, just made this recipe great! [For every pound of Ricotta cheese, use 1 cup of breadcrumbs, and one cup of Parmesan cheese,] Don't forget to add one tsp. of dried oregano to give this recipe some flavor. All the cheese and Ricotta has plenty of salt; so, you really don't need to add more. Adjust the amounts of the mixture (1 to 1/2 and 1/2) for smaller or larger portions. Cooking the bacon in microwave (about 1 minute for each strip) before placing it around the chicken reduces the amount of grease. Use olive oil to baize the chicken since there won't be much grease from the bacon. Enjoy.
