Banana Crumb Muffins

We loved these as well! I added cinnamon to the batter, and otherwise followed the ingredients as listed. I did wait to put the streusel topping on until the last 5 minutes of baking time. And, I made a second batch with chopped golden delicious apples. I used two large apples, noting that the volume was comparable to the bananas. I used my Pampered Chef chopper for the apples to make them nice and fine so they would cook well. Each batch yielded 15-18 regular sized muffins in paper cups. I did turn my oven down when adding the topping as I felt the 375 degrees was a bit hot, but maybe it was just my oven. The muffins were very moist and flavorful, and the topping was great!

Fresh Corn and Zucchini Pancakes

I think this is a very good use of the season's harvest. Upon another person's suggestion, I added 1/2 tsp. each of salt, pepper, and garlic powder. They were quite tasty! I did spread out the 1/3 cup of batter each time I placed it on the griddle so as to assure even cooking of the vegetables. Mine didn't look as puffy as the picture above, but I knew they would be done. Important for my children!

Taco Casserole

I thought pasta and chips in a casserole were a strange combination, and I was right. We will not be making this again. We only ate the tortilla chips with the casserole after baking, but it was just too weird. A lot of carbs in a small amount of food, too! I think the tomato soup made it too much like a box or dinner, and probably contributed to an overall mellow flavor. I used diced tomatoes with green chiles, but it was still not very flavorful.

Soft Chocolate Cookies

Everyone in the family liked this cookie! We chilled the dough for 2 hours before rolling into balls and then rolling in the powdered sugar. In doing this, it yielded 4 dozen instead of three! They seem a little flat, so I might try tweaking some of the ingredients next time to get them to be a puffy cookie, which is what I was looking for this time. The taste is very good. Oh...did not use the chocolate chips.

Easy Alfredo Sauce I

Very easy and quick to put together. I added minced onion & onion powder (I was in a hurry) and some minced garlic in a jar I keep in the refrigerator. I used shredded parmesan from the dairy section. Only comment negatively is the parmesan was stringy during stirring and when serving. Maybe a flour sauce with the butter would help? Might try next time and review again.

Baked Ziti I

Excellent recipe as many others have stated. I have made this several times pretty much the way it is. However tonight I added half a chopped green pepper, a small can of sliced black olives, and 1 lb. of Johnsonville smoked brats (which I sliced fairly thinly) to the hamburger when it was cooking. These made it even more delicious! I also changed the mozzarella to Italian blend, and after baking for 20 minutes put more on the top for the last 15 minutes. I feel this casserole needs more time to bake because of its density. I also put it into a pan one size larger than my 9X13 tonight, and it was still full to the top! That was probably because of the extra pound of meat, but the larger pan is a good idea - regardless. You will definitely need it. I bet you could add Italian sausage or pepperoni or whatever spicy meats your family likes to give it a different flair for the next time you make it. This brings it over the top compared to a pizza pasta casserole we used to make!
