Italian Sausage Soup

This soup was delicious. My husband and I both tend to load our food up with spices, and I worried that this would not be flavorful enough. We used hot Italian sausage, though (and low sodium broth), and neither of us felt like the soup was wanting for anything. I will definitely make it again!

Quinoa with Chickpeas and Tomatoes

This was good but far from amazing. It is a very light, healthy tasting meal, but it isn't exactly bursting with flavor. I just about doubled all of the spices and still felt like it was lacking something. Perhaps it would have been better if we'd had something else on the side to add variety to the meal.

Brown Sugar Meatloaf

I followed the advice of others and put half the glaze on bottom and half on top, added worchestire sauce to the glaze, used a large onion, and substituted oatmeal for the cracker crumbs. My husband is a gourmet and usually won't have anything to do with meatloaf, but he raved about it. His brother, who is afraid of anything besides plain cheese pizza and burgers with no toppings also loved it.

Coconut Cream Cake I

I love cake and I looove coconut, and so I fully expected to love this recipe. I didn't. That may be due in part to the fact that I couldn't find coconut extract and had to sub in lemon extract. But I think it was due mainly to the fact that the cake was simply much too sweet. Did it taste good? Yes . . . but if I try it again, I will definitely find coconut extract, and I will use coconut milk instead of the coconut cream. I might cut back on the sweetened condensed milk, as well. I would probably also make the white cake from scratch rather than using a box mix, as I don't think that did anything to help the cake.

Sesame Pasta Chicken Salad

This was a good pasta salad. I added sugar snap peas and red pepper. If I were to make it again, I would add more vegetables. Without the veggies, it would have been very boring, despite the yummy dressing.

Baked Goat Cheese

This was a tasty appetizer. It would have been even better with garden fresh tomatoes and would also have been improved if I had cut the thyme up smaller. Thyme is really a pain to mince, despite it's fabulous flavor.

Chicken Enchiladas II

I followed the recipe as written, and it was delicious. We had avocado and tomato slices, salsa, sour cream, and refried beans with the enchilladas . . . yummy! I only managed to get 5 enchilladas (rather than 6) from the recipe, but perhaps I just like mine a bit bigger than is really necessary. I will definitely make this again, and when I do, I might also try adding a few more green chilies.

Veronica's Hot Spinach, Artichoke and Chile Dip

This is very good! We had raw veggies, tortilla chips, and french bread on the side, and it went well with all of them. I'd like to try making it with fresh rather than canned/frozen ingredients next time and see how that turns out. I think I'll add a little more spinach, as well.

Sean's Falafel and Cucumber Sauce

I've made these many times now. I follow the recipe as written, with the following three amendments: 1) I measure the parsley very generously (1/2 cup firmly packed, plus some), 2) I microwave the chickpeas for about a minute before mashing (makes it much easier) and 3) I double the recipe for the cucumber sauce. We eat the falafel in pitas with lettuce, tomatoes, whatever other veggies we have on hand, plus LOTS of the sauce. Fabulous!

Curried Coconut Chicken

Very tasty! I followed the suggestion of another reviewer and served this together with Thai Cucumber Salad. A perfect blend of flavors! The sauce was indeed runny, but not any runnier than is typical of Thai curries. I thought it tasted fine that way. Next time around, I may try adding some bell peppers to the curry.

Three Pepper Pesto

I first made the recipe as written and it wasn't entirely to my liking. After adding more fresh basil (I nearly doubled it), a clove of garlic, salt, a bit more crushed red pepper, and a few pine nuts, it was delicious! With the modifications, I'd give it five stars.

Chicken Massaman Curry

This was a delicious recipe! It was a little bit too limey for my taste when we first ate it, but when we heated up the leftovers the lime flavor cooked out. Perhaps I just didn't cook it long enough in the first place. I added carrots and onions to the recipe and will add even more of those next time, as well as peanuts!

Chicken Tortellini Soup With Zucchini and Tomatoes

This was a good soup but a bit bland for my taste. My husband and I both added parmesan cheese and chili pepper to our bowls, and then it was delicious! I will make it again, but will spice it up a bit more (and add cheese to my bowl before eating).

Summer Squash Puffs

Chorizo Stuffed Bell Peppers

The best stuffed peppers that I've ever had! That said, I wish they hadn't taken quite so long to prepare. In addition to the chopping and what not, I had to simmer the filling for at least twice as long as the recipe said before the rice was properly cooked. Some day when I have a lot of time on my hands (will such a day ever come?), I will make these again.

Blackberry Pie III

This was a very tasty pie . . . but then what blackberry pie isn't tasty? Unfortunately, my pie didn't set up very well and was quite runny (a problem I've never had with other blackberry pie recipes). I'm probably to blame, as I was very generous in my measuring of the blackberries and should have probably thrown in an extra tablespoon of flour to compensate.

Chole Saag

I originally gave this 4 stars because it wasn't quite the saag recipe I was looking for. But now that it's become a staple in our household, I think I ought to revise my rating! We love this. I measure the spices generously, use fresh spinach, and add a bit more spinach than is actually called for, but other than that, the recipe hasn't evolved much in the months that we've been making it.
