Butter Chickpea Curry

Delicious! Served over rice, this makes for a very hearty (albeit starchy) meal. Like another reviewer, I served this with Guferati (Indian Green Beans), and the combination of flavors was excellent. I will make this again, and probably toy with using different vegetables (for example, cauliflower instead of potatoes).

Spicy Indian (Gujarati) Green Beans

Five stars, not because it is perfect, but because this is my new favorite green bean dish. My husband and I are both usually bored by green beans . . . not this time! These were very flavorful. Next time, I will cut back on the oil a bit and use just 2 or 3 Tbsp. I may also turn up the heat on the oil to better release the flavor from the mustard seeds.

Sour Cream Chicken Enchiladas

There are loaded with flavor, and the jalapeno salsa gives them a great kick. Next time I will use a smaller onion (I used a medium-sized one) and will briefly saute it to take out some of the crunch. I was short on time so we just ate these as is, but next time I'll add a side of refried beans and spanish rice, as well as some sliced avocado.

Hasenpfeffer (Rabbit Stew)

Out of this world! We added mushrooms to the gravy, as suggested by other reviewers, and cooked up a wild rabbit that a friend killed for us. Delicious!

Sukhothai Pad Thai

I followed Bes's modifications, except that I used both rice wine vinegar and lime juice in the sauce. This was very good. I'd like it to taste a bit more peanuty next time. I think I might also add another egg. And I will up the spice!

Slow Cooker Chicken Taco Soup

Pretty good. I guess a prefer something with a fresher taste, but for a quick, out-of-the-can meal, this is quite good. In addition to tortilla chips and cheese, try topping your bowl with a few avocado slices. Yum! Note: I have since tried this again with fresh tomatoes, jalapeños, onions, and chilli peppers from our garden, extra taco seasoning, as well as with a home-brewed dark beer and . . . Yum, much better!

Red Lentil Curry

Fabulous! We used Patak's hot curry paste and served this over rice with a dollop of plain yogurt and a spoonful of coriander chutney. Yummmm! This recipe is a keeper. Note that the curry sauce reduces very quickly. My husband poured about 4 oz of the beer that he was holding into the sauce to keep it from drying up, and that seemed to do the trick. :o)

Spinach Triangles (Fatayer Sabanegh)

These were good. I made a half recipe, and my husband and I polished them off in a matter of minutes. With a bit of goat cheese in the filling, I think this would be GREAT. I plan on trying that (and I'll report back when I do). Post-goat-cheese Report . . . I crumbled a couple ounces of goat cheese into the filling this time, and it was very good. It added a sort of tangy creaminess. I like it better with the cheese than I did without, but given the price of goat cheese, I probably will go without it next time.

Adobo Chicken with Ginger

This was very good. The chicken was ridiculously tender and very flavorful. I had worried that the garlic would be overpowering, but that was not the case at all. I just wish there was a little more variety within this dish itself (some hot peppers or vegetables, for example), but you can of course serve veggies on the side.

Spinach Noodles

These were delicious, and I will make them again. I have only given the recipe three stars, however, for the following reasons: 1) it claims to take 20 minutes prep time and only 35 minutes until finished. This is totally inaccurate, due largely to the drying time but also because cutting the noodles takes some time, as well. From start to finish, it took me well over two hours. 2) For some one, like me, who has never made noodles before, the directions simply aren't detailed enough. With the first ball that I rolled out, I didn't put enough flour on it (use a lot!), and it was nearly impossible to unroll the noodles once I had cut them. Apart from my problems with how the recipe was written, I highly recommend this dish. Like other reviewers, I made it with the Quick and Easy Alfredo Sauce on this site, and it was fabulous.

Roasted Sweet Potatoes & Onions

This was a unique and delicious blend of flavors. I didn't have any amaretto, so I used about 1/2 tsp of almond extract and added an extra tbsp of olive oil. Very good! I will make this again. SECOND ATTEMPT: I just tried making this with the amaretto, and my husband and I actually preferred it the first time (with almond extract and extra olive oil). The amaretto made it sweeter than it needed to be. The almond extract gave all the same flavor minus the sweetness.

Curried Mustard Greens with Kidney Beans

Yummy! It sounds like such a strange combination of ingredients, but it is delicious. I upped the curry and red pepper flakes (3 tsp curry and a couple good shakes of red pepper), and that was just right for me and my spice-loving husband. We used heavy cream instead of half and half, but other than that followed the recipe as written. Next time I will use more mustard greens (1.5 or maybe even 2 bunches) and possibly sautee them in the curry so as not to lose the nutrients (which will mean adding more liquid to the curry).

Ukrainian Red Borscht Soup

I don't give many 5-star ratings (and my husband doesn't give ANY), but we both love this. Best recipe I've come across on this site. I just ate three bowls, and my husband is serving himself a fourth bowl right now. Amazing. I followed the recipe as written but used only 1/2 tsp of sugar rather than a full tsp. It seemed just right to me. Some reviewers recommended using fresh dill rather than parsley. I looove dill, so I gave that a try, and it was very good. That said, my husband and I both prefer it with fresh parsley. Parsley accentuates the complex medley of flavors in the soup rather than blurring/masking them. Next time we will try this without the sausage to see whether we like it as much.

Romanian Apple Cake

I made this today for my little boy's birthday party. The guests seemed to like it and several of them went back for seconds, but it just didn't do it for me. Too many apples made for a sort of mushy texture. I think it would have benefited from more cinnamon, but I won't be making this again. Frankly, I doubt that I'll eat the leftovers. I infinitely prefer my mom's apple cake (with cream cheese icing, yum) and am going to make sure I track down her recipe!

Chocolate Cavity Maker Cake

For a doctored cake mix, this is a 5 star recipe. Moist, rich, and absolutely delicious with a dollop of whipped cream. Because I bought the ingredients on Sunday and live in a very conservative area, I couldn't purchase the liquor. I used coffee instead, which worked out well. I look forward to making this again with the coffee flavored liqueur or possibly Kahlua. [Note: I just made this for the second time, this time with the coffee flavored liqueur. Also fabulous, but my husband and I actually preferred the more subtle taste of coffee to the more overpowering flavor of the liqueur.]

Chicken Korma II

This sauce is absolutely delicious! I've tried many of the Indian recipes on this site, and this is one of my favorites. Next time I will reduce the amount of chicken and add a variety of veggies to give the meal more flavor, texture, and color.
