Pollo Fajitas

The chicken was deliciously tender but a bit short on flavor when compared with more traditional fajitas. I will go with a more traditional recipe next time. The soy sauce mix was not bad; it just wasn't as good as regular fajita seasoning.

After-Thanksgiving Turkey Soup

I made the broth using legs from a wild turkey, and then I chopped up some of the breast (which we had smoked) and added it to the soup. I added garlic nd cut the butter and flour back by 1/4 cup each, and I also added a 10 oz bag of frozen peas. Without them, I think the soup would have been rather one dimensional. It had a nice flavor, but if I were to make it again, I would do a bit more tweaking (add more carrots and maybe some mushrooms, etc).

Boilermaker Tailgate Chili

This was good chili. I misread the recipe and used 4 cups of beef broth instead of 4 cubes of bouillon. Needless to say, it was on the brothy side, so I simmered it uncovered for 2 hours and then drained off a bit of excess liquid. Flavorful enough for all the adults who ate it and mild enough that (when served with noodles and cheese) my 1-year-old liked it, too.

Marinated Venison Steaks

Yum! I was short on time and only marinated these for three hours, but they were still very flavorful and very tender. I will broil them for a slightly shorter time in the future. These came out medium well and we prefer medium rare.

Peppy's Pita Bread

So easy, so good! No more store bought pita for me. I subbed in 1/2 cup whole wheat flour and used honey instead of sugar. Next time I will try upping whole wheat flour to 1 cup.

Tacos in Pasta Shells

I was surprised by how good this was. I confess to a few changes, since we like our foods well seasoned . . . In addition to the chili powder, I used garlic powder, onion powder, cumin, paprika, and oregano. I added these same spices to a jar of tomato sauce in lieu of the taco sauce. And I added at least one cup of salsa, as well (put some on top and some on bottom). I almost omitted the chips but am glad I didn't . . . The flavor and crunch added a lot to the dish. We ate this with avocados, green onions, and sliced olives.

Chicken with Cranberries

Delicious! I don't know that I've made chicken breasts that have turned out more tender than this . . . of course, that might have something to do with the fact that I splurged and got free-range chicken. Either way, yum! I might cut back on the vinegar a bit next time and add a splash of orange juice, but I'll definitely make this again. I served it with steamed peas and also Roasted Sweet Potatoes and Onions (from this site), and the flavors blended beautifully.

Pumpkin Chocolate Dessert Cake

This is very moist and flavorful (not as chocolate-y as I expected), and the guests were all impressed. Personally I thought it needed salt. I'm not usually one to add salt to everything (in fact, I halve it in most recipes), but a little bit of salt would have improved this cake. Also, the bake time was about 15 minutes longer for me.

Squash and Kohlrabi Empanadas

I made the empanada dough from scratch (and had to bake these longer as a result), but otherwise followed the recipe exactly. The filling is delicious! I may make these again, but if I do, we'll come up with some sort of dipping sauce. They seemed a bit dry.

Curried Rice Pilaf

This was fine, but nothing special. We served it with cedar plank salmon, steamed broccoli, and a delicious curried salad. The pilaf complimented all of these but it was the other dishes that stole the show. Perhaps show stopping isn't the job of a pilaf, though?

Penne with Spicy Chicken Sausage, Beans, and Greens

This was fine but not fabulous. I liked all of the individual flavors but found the blend somewhat strange . . . not bad, but strange. Perhaps that had something to do with my choice of sausage? I got chicken apple, since it was the only chicken sausage without nitrates at my grocery store.

Sticky Apple Biscuits

Yum! These were easy to make and delicious! No one stopped at just one. That said, I think the actual biscuit portion could stand to be moister and fluffier. I might toy with the recipe a bit next time.
