Quinoa, Beet, and Arugula Salad

Five stars because it is my favorite quinoa recipe that I've tried. Next time I might up the proportion of beets and/or greens a bit.

Grandma's Lemon Meringue Pie

My lemons seemed a bit small and the lemon flavor is the best part of the pie, so I juiced and zested 3 (rather than 2) lemons. This turned out wonderfully! I have never had a better lemon meringue pie.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

This was very good and I will likely make it again, with the following adjustments . . . I used a garlic-herb cheese spread in lieu of the Boursin, I sautéed the asparagus (1.25 lbs) with the mushrooms, I added a generous amount of ground black pepper and a bit of crushed red pepper, I cut the broth to 1 cup, and I added a few ounces of diced ham. YUM!

Authentic Saag Paneer

I don't give many 5-star ratings and this isn't a perfect recipe, but it produced the best saag I have made so far (after trying three other recipes). I am puzzled by the reviews that say this is bland. My husband and I like our food heavily seasoned (and spicy). Both of us were pleasantly surprised when we didn't feel the need to add chile paste, hot sauc, etc! I admittedly measured the spices generously, and I did use coconut milk instead if cream, too. In fact, I found that for the amount if spinach I used (1 lb), I needed to add almost a whole can of coconut milk to get the consistency I wanted. My Indian grocer was out of fresh fenugreek, so I used a couple tablespoons of dry fenugreek leaves, and they added a lot of flavor. I also made the paneer from scratch . . . Yum! I will definitely be using this recipe again.

Light Wheat Rolls

This look very pretty but I found them lacking in flavor. If I were to try the recipe again, I would use milk instead of water, honey instead of sugar, or maybe add puréed squash or mashed potatoes for extra flavor and moisture.

Paneer Jalfrazie

I used homemade paneer, which was delicious. The sauce itself was fine, though s bit sweet for my tastes. I liked the hint of fennel but would probably add some cayenne or Serrano if I make this again. Since my kids (2 and 4) weren't especially keen on it, I probably won't.

Pork Chops for the Slow Cooker

Taste-wise, this is just pretty good (as long as you cut the soy sauce by half and add honey) but it is so quick and convenient, and the meat was so tender, that I will likely make it again. It paired well with rice And steamed broccoli.

Carol's Cinnamon Waffles

These are very good! I used only 1/8 a cup of white sugar and about 1/3 cup of brown sugar, plus I used half whole wheat flour. Straight white flour and all the sugar would have felt too much like dessert to me! This was delicious (and a bit healthier) with those modifications.

Stuffed Peppers My Way

This is an excellent base recipe to tinker with. I have made this twice, adding a few different ingredients each time, and both versions have been wonderful yesterday I doubled the recipe, added 1 lb of ground chuck, garlic, a Serrano pepper, and a yellow summer squash. I stuffed it into a mix of red and orange bell peppers from our garden. Yum!

Okra Patties

My toddlers both loved this dipped in ketchup, but to my taste it was a 3-star recipe. That said, I think it could be made into a 4 or 5 star recipe if I had formed it into thin patties instead of just slightly flattened spoonfuls. The tastiest part is the crunchy brown exterior, so I think a thinner patty would be better. If I make it again I will also add some garlic and a pinch of cayenne pepper.

Pumpkin Pancakes

Hot off the skillet, topped with butter and maple syrup these are delicious! I used 1 cup of whole wheat flour but otherwise followed the recipe exactly . . . A recipe that I will be using again. Might try throwing the whole mix in my blender to get a smoother texture next time.

Eggplant Parmesan With Easy Homemade Sauce

Yum! Dipping the eggplant in olive oil gives it a fabulous flavor. I made my own sauce with tomatoes from the garden, so I can't comment on the sauce recipe, but the eggplant preparation was very flavorful and perfectly cooked.

Roasted Okra

So simple, so good. Don't tie yourself to the amounts in the recipe, though. The size of okra pods can vary. We pick ours young, so I used probably 40 pods or so (13 oz prior to removing the stems), and 3/4 tsp of salt was plenty.

These were good but perhaps a little too cakey for me. As beautiful as thick, fluffy pancakes look, the syrup just sort if disappears into them. I think I like a thinner pancake better.

Chocolate Syrup

This never seems to fully thicken, even in the fridge, but it tastes great anyway. I cut back the sugar a bit to get a darker flavor. Yum!
