Sun-Dried Tomato Basil Orzo

Yum, a keeper! I used two 7.5 oz jars of sun-dried tomatoes (undrained), 4 oz of fresh basil, 2 or 3 oz of Parmesan (a better grade), a bit of salt and some goodly shakes of pepper to a whole box of orzo. I added olive oil after I blended the pesto in the food processor, and only enough to make the consistency blendable with the orzo. I want to try this with feta, and adding sliced olives would be great for either cheese - if my family didn't have a tendency to pick them out!

Slow Cooker Chicken and Dumplings

WOW it was that easy and that good. I cook sunday dinner for my husband and a bachelor friend of ours and we all three loved this. My take on it after reading other reviews was to use two cans cream of chicken as stated in the recipe, but to use chicken broth instead of water. I added salt, pepper and poultry seasoning to the chicken breasts when I put them in the crock pot. 90 minutes before dinner, I added one 16-oz can of biscuits cut into thumb-size pieces and made sure they were submerged. I also threw in one bag of frozen mixed veggies that I microwaved and drained. I didn't want to slow the dumpling cook time, and I didn't want the veggies to cook to mush. I was very happy with how it all came out.

Hot Italian Giardiniera

Magnificent. Stuck to the recipe, except for the jalapenos I removed the seeds from 2 and used only 6 total. I thought is was a nice hot at that much jalapeño and many of my guests thought it was too spicy. So, flavor was top notch, but my crowd would have preferred half the jalapeño. Love this and will make it again.

Creamy Vanilla Ice Cream

Made the recipe as published for a party of 20 to raves from all. I've tried more custard-like bases and lighter bases, but to me, this is absolutely the perfect balance. Don't change a thing.

Beef Stroganoff III

I am rating the popular mod adding 1/3 cup cream cheese and with a med onion instead of green onions. Wow! OMG, wow!! Hubby and frequent dinner guest love this. It just improves as a leftover. Heaven.

Chantal's New York Cheesecake

Wow. Wow wow wow. Best ever, and I made it exactly per the recipe. Well, except the crust - I added a pinch of cinnamon and sugar to the crust. But it's the cheesecake itself that's the winner here. It's soo creamy and good, deli style but not the really dry kind. I love Ely's cheesecake and Cheesecake Factory, but this tops both. I honestly don't think I've ever had a better cheesecake. I did cook it in a water bath, greased the springform pan, and cooled it a couple hours in the oven (2-ish). No cracking, just awesome cheesecake that all my guests raved about. Frankly, I didn't know I could make something this good myself.
