Hot Fruit Salad

I just love this recipe. It is by far one of our favorites. It is versatile on two fronts - how you serve it and what you put in it. It can be used as a topping for pancakes/waffles/french toast/oatmeal, as a side dish, or as a dessert served with ice cream. I like to slice pound cake, lightly butter both sides, cut into cubes and lightly toast in the oven. These can then be sprinkled like croutons on the warm fruit and ice cream. It's also versatile in what you include. I made it per the recipe the first time, adding pears as others suggest. Finding that mandarins aren't that flavorful, I subsequently used orange marmalade to impart a better orange flavor. I also cut back on the sugar when using the marmalade. I toss in additional frozen cherries when I have them. Whole berry cranberry sauce is a tasty addition as well. This is great anytime of the year, but seems extra yummy in the fall/winter. Tiramisu Layer Cake

5 stars plus! This recipe is delicious - not overly rich or sweet. I had 2 guests for a total of 5 for dinner, so I made individual trifles. Bake two 9 inch cakes, 1 with coffee, 1 without, and freeze. Increase the filling by 50% - 12 oz cheese (substitute worked great), ¾ C sugar, 3 T liqueur. 24 hours ahead, thaw the cakes slightly, chop into cubes so they resemble small croutons, spread cake pieces on two cookie sheets and drizzle with coffee mixture. Make a bit more frosting using 2½ cups of heavy cream, 1/3 cup conf. sugar and 3 T of liqueur. Fold ¾ cup of the frosting into the filling. Layer as follows, pressing cake down lightly: white cake pieces, filling, dark cake pieces, filling, white cake pieces, frosting. The frosting should fill them to the top. Smooth flat. Alternate which type of cake you start with. Sprinkle with cocoa powder and chocolate shavings, refrigerate. I put the 5 for dinner in martini glasses. They looked great. The rest went into plastic 9 oz cocktail cups, for a total of 13. I was able to share with the neighbors, impress my dinner guests and easily send them home with 2nds. Awesome recipe.
