New England Clam Chowder II

great recipe! I made it for my dad who is ill with cancer and he ate every bite... After reading the reviews, there was someone who wanted thicker; in that case you could at any time during the cooking time, add some gravy flour a little at a time till you get the thickness you desire. As for the juice in the caned clams; it is better discarded, as some have preservatives such as MSG and no one wants that in there mix. Great job! Nan

Beef Pot Roast

good recipe made with tradition in mind. I think most people are forgetting to add fresh herbs to there recipe's. This one could have used some fresh parsley, sprig of rosemary and thyme. It always adds some freshness to the meal.

Mint Sauce

My mom is from England and she has made mint sauce for years. Mint sauce is about the mint not the vinegar... In a sauce pan take a fist full of fresh mint leaves that have been coarsely chopped and place them in the pan with 2 cups of simmering water. Let it simmer on med.low heat for 15 min. then add two level table spoons of white sugar and mix till dissolved; then add three table spoons of apple cider vinegar and simmer for a few more min. Taste to see if you would like more sweet or tart and add some more sugar or vinegar to your liking. The true English Style Mint Sauce has more mint flavor and less tartness. Enjoy.

Mushroom Sauce Baked Pork Chops

As most have commented,this does need some extra herbs and such. I went to my herb garden and picked some rosemary and parsley, chopped it up fine and sauteed them with spring onion, celery, garlic powder, season salt, fresh ground pepper and paprika. Then I poured the mixture into the soup and stirred till mixed and then poured over the chops and potatoes. At the very end, I added one half cup Marcella wine and one half cup beef stock. I have been making this for years and it is great.

Hearty Split Pea Soup

split pea and ham; soo good together. As other viewers, I used chicken stock.I also added fresh herbs from my garden; thyme, rosemary and curly parsley. I had left over roasted ham, which gave awesome flavor. thanks for the recipe. nan

Spicy Collard Greens

I too have southern back ground and we have always put some sort of pork in with the collard's, but what make's this recipe so good and different is the chicken stock. Plain water just doesn't cut it for me any more... I used a mild hot sauce because of the pepper and it was just great. Thanks for the gift. nan
