Pumpkin Coconut Bread

Unbelievably Easy Slow Cooker Black Forest Cake

Sorry to say but for me this just came out as a gooey mess. I had a few bites and my kids wouldn't eat it at all. Maybe I can try it a different way next time.

French Toast Casserole

Yum yum yum!! This is great!!! I made a few changes based on other reviews. I used half a loaf of Oroweat cinnamon raisin bread and cut it up into cubes. Then I mixed the eggs, milk, cinnamon, 1/4 cup Splenda, salt, and a splash of vanilla extract all together in a bowl and poured it over the bread cubes. I stirred it all up and let it sit for 10 min. Then I transferred it all to a greased baking dish and poured about 1/3 cup melted margarine all over the top as well as some brown sugar. I baked it for 45 minutes total. 25 minutes covered and the last 20 minutes uncovered. Wow it turned out so well, everyone loved it!! I served it with syrup and sliced strawberries! I will definitely be making this again!! It's a keeper!!!

Tres Leches (Milk Cake)

This cake was absolutely delicious!!! It was my first time making tres leches and it was so easy! I did make a few changes based on other reviews. I used a boxed vanilla cake mix and used a tub of fat free whipped topping instead of making my own whipped cream. I omitted the the whole milk and instead used a can of coconut milk. Also I used fat free sweetened condensed milk and fat free evaporated milk. I had no problems with there being too much liquid, in fact some parts were still dry after it sat in the fridge overnight. I probably just didn't poke enough holes in the cake. Finally on top of the whipped topping I added fresh strawberries and canned pineapple chunks. The pineapple was a fantastic addition, it went perfectly with the coconut milk in the cake! All in all this tres leches was delicious and my Mexican friends loved it!! I will definitely make this cake again!!!

Sweet Corn Cake

This corn cake is absolutely delicious! My family loved it, even my picky husband. :) I used regular flour instead of masa harina because that's what I had and I didn't use a food processor for the corn. I definitely plan on making this again but I think I will use less sugar next time because it is very sweet. All in all though this is a great recipe!

Fruit Dip II

So yummy! I've made it twice. First using strawberry cream cheese, o.j. and cool whip as others had suggested. Then the second time I made it pretty close to the original recipe, I did add some cool whip to this batch as well though. Surprisingly the second batch was so much yummier! Both were well received but the original recipe is the best!

Sweet Cornbread Cake

Delicious cornbread! Next time I make this I will probably use less sugar because it is pretty sweet. Even with the amount of sugar called for this is wonderful cornbread. :) Update: I have made this again using only 3/4 cup sugar instead of the full amount and it came out perfectly! I will definitely be making this cornbread again and again!

Korean Salad with Sesame Dressing

This salad dressing was wonderful! I just used a bagged salad mix instead of the red leaf lettuce and green onions. Also the only things I changed about the dressing were that I omitted the red pepper flakes because I didn't have any and added sesame seeds. It was very tasty!

Citrus Turkey Brine

I had such high hopes for this brine as it was my first time brining a turkey. I have to say the turkey was moist and delicious BUT I could not taste any of the flavors that went into the brine at all. So I probably won't use this again for a turkey. The citrus brine didn't seem to give it anymore flavor than a plain salt and water brine would. I would like to try it again using a smaller piece of meat. I had a 23 pound turkey that I brined for 24 hours. Maybe if I had brined it for 48 hours then it would have been more flavorful. All in all it seemed like a lot of work for not a lot of flavor.

Crustless Cranberry Pie

This turned out really well! I only made a few changes. I added a teaspoon of vanilla, a dash of cinnamon and exchanged pecans for the walnuts because that's what I had on hand. Delicious! I plan to make this again!

Black Bean and Corn Salad II

This was really delicious! I did make a few changes according to what I had on hand. I used lemon juice instead of lime, canned corn instead of frozen and omitted the green onions and cayenne because I didn't have any. I also used two avocados instead of one, I should have just stuck with one though. The avocados made the salad look creamy and so it didn't look as fresh and colorful as it could have. Next time I will just serve avocados on the side. Also I will only make half the dressing because the salad was just swimming in it and I even reduced the oil to 1/3 cup. Even without the changes though this was a delicious recipe. Thank you! :)

Mock Coconut Pie (Spaghetti Squash Pie)

WOW! This pie is so yummy! My picky kids even loved it! I followed the recipe as stated except I only used 1/2 cup sugar and omitted the pinch of nutmeg. The wet mixture fits nicely into one 9 inch deep dish frozen pie crust. Next time I make this I will definitely chop the squash up into shorter strands so that the pie is easier to cut. Also just for fun I might try it sometime with coconut extract like others suggested. This pie doesn't need it though, I just love coconut. :) Oh and we didn't use whipped cream because it's good enough without it.

Mulligatawny Soup I

WOW! This soup is fantastic! I ended up doubling the recipe. I also added twice the amount of curry powder that is called for. It turned out wonderfully! Make sure to add the heavy cream, it makes this soup soooo yummy and creamy! Thanks for a great recipe!

Hoisin-Ginger Beef Skewers

This dish was delicious! I changed a few things. First I only used about five drops of Sriacha instead of a whole teaspoon as it would have been too hot for my little ones. Also I only used one pound of beef and I did not grill it. I just cooked the marinated beef in a skillet on the stove. I served it over brown rice and with a side salad called "Korean Salad with Sesame Dressing" from this site. Great meal!

5 Minute Microwave Cornbread

I decided to try this because my oven is broken and my family loves cornbread. Wow this is an awesome recipe! It's not quite as good as cornbread from the oven but it is still wonderful and my kids loved it! Thanks for a super quick and easy recipe! I'll definitely be making this cornbread again and will probably add a little more sugar to it next time. :)

These are very good. I used a mini muffin pan and baked them for 11 min. They turned out great! I think next time I will add cinnamon and vanilla to the batter but as written they were yummy! :)

Chicken Arroz Caldo (Chicken Rice Porridge)

This was wonderful! I used brown rice and chicken breasts because that's what I had on hand. Also I added some celery when it was close to being done cooking. We garnished it with cilantro, avocado, and green onions which complemented the dish nicely. This was such a great meal for a cold snowy day. Thanks for this wonderful recipe!

Fried Rice I

Yummy! I used rice that I had made in the morning and let sit out for a while so it would dry out a little. This worked out well because then the rice didn't get mushy. Also I didn't use bacon but I can imagine that it would have been delicious. I will probably use more soy sauce next time but all in all I liked it!
