Banana Crumb Muffins

These are very good. I used a mini muffin pan and baked them for 11 min. They turned out great! I think next time I will add cinnamon and vanilla to the batter but as written they were yummy! :)

Cornmeal Cookies II

These cookies are simple and delicious! I followed the recipe as stated except I skipped the butter flavored extract because I didn't have any. Also there is no baking time listed so I baked them for 13 minutes. These cookies did come out a little dry for me but I'm sure a glass of milk would fix that! All in all our family enjoyed them!

Oatmeal Butterscotch Cookies

Yum these cookies are delicious! I followed recipe as stated except I didn't have any brown sugar on hand so I just doubled the white sugar. They came out great and everyone like them!

Beef and Bean Chimichangas

Very yummy! My husband and I really liked these! I changed the recipe a little according to what I had on hand. I'm sure they would have been just as good or even better if I had followed the recipe exactly. I will be making these again!

Quick Gnocchi

This was great! I love this quick gnocchi! I followed the recipe as written except I used roasted garlic and parmesan mashed potato flakes. This gnocchi went wonderfully with Italian sausage and spaghetti sauce. Thanks for the recipe!!!

French Toast Casserole

Yum yum yum!! This is great!!! I made a few changes based on other reviews. I used half a loaf of Oroweat cinnamon raisin bread and cut it up into cubes. Then I mixed the eggs, milk, cinnamon, 1/4 cup Splenda, salt, and a splash of vanilla extract all together in a bowl and poured it over the bread cubes. I stirred it all up and let it sit for 10 min. Then I transferred it all to a greased baking dish and poured about 1/3 cup melted margarine all over the top as well as some brown sugar. I baked it for 45 minutes total. 25 minutes covered and the last 20 minutes uncovered. Wow it turned out so well, everyone loved it!! I served it with syrup and sliced strawberries! I will definitely be making this again!! It's a keeper!!!

Tres Leches (Milk Cake)

This cake was absolutely delicious!!! It was my first time making tres leches and it was so easy! I did make a few changes based on other reviews. I used a boxed vanilla cake mix and used a tub of fat free whipped topping instead of making my own whipped cream. I omitted the the whole milk and instead used a can of coconut milk. Also I used fat free sweetened condensed milk and fat free evaporated milk. I had no problems with there being too much liquid, in fact some parts were still dry after it sat in the fridge overnight. I probably just didn't poke enough holes in the cake. Finally on top of the whipped topping I added fresh strawberries and canned pineapple chunks. The pineapple was a fantastic addition, it went perfectly with the coconut milk in the cake! All in all this tres leches was delicious and my Mexican friends loved it!! I will definitely make this cake again!!!

Slow Cooker Enchiladas

Pretty good! I changed some things based on other reviews though. I used 2lbs of ground turkey instead of beef, doubled the tortillas and added a can of black beans. Also I baked it in the oven at 375 degrees for 50 minutes. All in all it was pretty good and my picky family ate it. This dish was easy and I would probably make it again.

Creamy Banana Lettuce Salad

Wow this is delicious!!! I used slightly less mayo and used raspberries and walnuts instead of strawberries and peanuts because that's what I had. All in all this dressing came out wonderfully!! Thank you for the recipe!!!

Strawberry Jam

This strawberry jam was absolutely delicious!! It was my first time making jam and this recipe was very easy! The reason I only gave it four stars was because I only used 1 1/2 cups of sugar which gave it just the right amount of sweetness. It seems like it would have been way to sweet with all that sugar. Also I did the freezer test which worked out great! I think I only boiled the jam for about 17 min and It came out perfectly!! I will definitely be making this again!!!

Sweet Corn Cake

This corn cake is absolutely delicious! My family loved it, even my picky husband. :) I used regular flour instead of masa harina because that's what I had and I didn't use a food processor for the corn. I definitely plan on making this again but I think I will use less sugar next time because it is very sweet. All in all though this is a great recipe!

Citrus Turkey Brine

I had such high hopes for this brine as it was my first time brining a turkey. I have to say the turkey was moist and delicious BUT I could not taste any of the flavors that went into the brine at all. So I probably won't use this again for a turkey. The citrus brine didn't seem to give it anymore flavor than a plain salt and water brine would. I would like to try it again using a smaller piece of meat. I had a 23 pound turkey that I brined for 24 hours. Maybe if I had brined it for 48 hours then it would have been more flavorful. All in all it seemed like a lot of work for not a lot of flavor.

Quick and Easy Alfredo Sauce

This Alfredo sauce had pretty good flavor but it never seemed to thicken up enough for me. It was pretty runny. This recipe is definitely something you could work with though and make your own.

Peanut Butter Chicken Skewers

This turned out really well. However I made one change and that's why I only gave this recipe four stars. I added a lot more brown sugar than the recipe called for which balanced out the saltiness from the soy sauce and the tartness from the lemon. I cooked this on the stove in a frying pan and served it over coconut rice. The whole family loved it! I will definitely make this again with the added brown sugar! It was fantastic!!!
