Salmon Avocado Salad
This salad was very good. I used red onion instead of the mushrooms. I did not use the vinegar but used lemon juice with the olive oil. I also did not combine the lettuce and instead just plated it. The salmon was still warm when I added it to the bowl so next time I will cook the salmon ahead of time. It may be even better if it all melds in the fridge for awhile. Will make this again. Yummo!

Sugar Coated Pecans
Made these for kids' teachers as a Thanksgiving treat. Teachers raved! They are delicious! Easy to make..I used two egg whites, water and vanilla like many other reviewers suggested. Also mixed them in a big ziploc. Made two big cookie sheets of them. I did cook them a bit longer than called for...they were a bit gooey still at the one hour mark...could be because I neglected to mix them during cooking. Highly recommend!

Butternut Squash Soup
This was amazing! Relatively easy to make and so darn good. I used only 1 1/2 cream cheese squares and did not measure the cayenne so may have added more than it called for. It had a spicy kick at the end but not the kind of hot where you drink endless amounts of water while eating it. Next time I will add more water as it got a little thick as it cooled. Will definitely make this again. My kids even liked it! Such a nice fall/winter meal.
