Blueberry Loaf Cake

Made a double batch this morning for the kids who attend my Family Garden Camp. They devoured the 2 loaves! Hardly a crumb left!

Drumsticks with Peach and Honey

Thanks for posting this recipe! I have to say: my rating is for what I made -- which was not this exact dish, but one inspired by it. Had to make variations allowing for what our freezer/pantry held, but this was a forgiving recipe. Used 4 drumsticks and 2 bone/skinless thighs. Subbed fresh grated ginger (which I sauteed at beginning w/ garlic and onions), and 1/2 lime thinly sliced. Used large can of pineapples instead of peaches which seemed to go very well with the Asian flavors. Decided to broil the drumsticks for a few minutes while the sauce was simmering down, and I'm glad I did as it added a nice color and texture to the skin. Next time I'd marinate the chicken in the juice from the can of pineapples (plus a little soy sauce, and maybe garlic and ginger)...if I plan ahead!

Potato Latkes I

Per other reviews, I doubled the onion and halved the egg and these turned out great! Didn't need 1/2 cup oil; I used maybe 1/4 cup canola oil (didn't have peanut and wanted to let our one-year-old try some anyway) in an electric, non-stick skillet and VOILA! Crispy and delish!

Portobello Burgers with Goat Cheese

Mmm-mm-mm! For faster cooking (and sooner enjoying!) I pressure-cooked the beets, which only took 15 mins. Used Mediterranean seasoned feta cheese from TJs, which I toasted onto ciabatta buns. Super yummy and definitely healthy meal (ate with kale chips and sliced persimmons as side dishes). Bonus: if you cook extra beets you have the makings of a delish spinach-beet-goat-cheese salad the next day!! Thx for the recipe. (I have a feeling that hubby won't be ordering portobello burgers in restaurants anymore now that these babies are in our repertoire!)

German Sweet Chocolate Cake I

DO NOT ATTEMPT TO MAKE THIS RECIPE USING AN OLD-SCHOOL, MANUAL HAND MIXER!!! (unless you want to be super buff.) I made this at my friend's house; she doesn't have an electric mixer, so I did it low-tech. Lots of work, but it turned out great...and bonus: I felt like I deserved the calories!

Chicken Enchiladas with Creamy Green Chile Sauce

My sis -- who lived in Santa Fe for years and is picky about green chile -- loved these. Leftovers did not last long! We topped w/ plain yogurt and green chile salsa. (Also, I just microwaved the tortillas a couple at a time for a few seconds to make them pliable enough to roll up...)

Apple Crisp IV

Followed the recipe *almost* exactly (ran out of butter, so we were short 1/4 cup). Mmm-mm-good! MUST be eaten w/ a scoop of ice cream or frozen yogurt. I'm 4.5 months pregnant and I swear Baby wiggled with pleasure when I was eating this for dessert!
