Savory Chicken Breasts

So very good! Delicious, moist chicken with a crunchy topping! I pounded 3 chicken breasts and cut in half to make more uniform, seasoned with onion powder, garlic powder, pepper, and a pinch of cayenne. Used provolone cheese on half of them and sharp cheddar on the other 3. Used 1 can cream of chicken soup with 1/4 cup sherry. Topped with 1-1/2 cups Panko breadcrumbs mixed with 4 Tbs. melted butter and mixed in a bit of garlic salt and paprika. Baked as directed in a 9 x 9 pan. Used Low broil for last few minutes. Let sit for 10 minutes and actually served over strained Ramen noodles -- was in a pinch but was perfection!

Chicken El Dermie Le Hermie

We went skinless so also used a bit of paprika and cayenne for color - turned out beautifully in the allotted cooking time; juicy and tender. Served with rice and green beans. No leftovers!

Molasses Cookies

Fabulous cookie -- I think the spice combo is perfect. I did use 1/2 cup white and 1/2 cup brown sugars... and butter. They did kind of flatten out, but it's a small price to pay, and still so delicious. Just say no to margarine.

Slow Cooker Pot Roast

All I had was one package of dry onion soup mix so I rubbed garlic and onion powders into the meat (and a little steak seasoning) and then floured and seered in oil/butter. Was perfect! My boys gobbled it all up. I didn't have 8 hours so cooked on high for 5. I think really getting the flour and seasonings into the meat makes a difference. Perfect! Oh and added some cubed potatoes around the three hour mark for hubby -- boys and I had mashed.

Mama's Asian Chicken and Rice

Deliciously Satisfying!! I made this pretty close to the recipe. I didn't have orange juice so substituted lemonade, and didn't have the 5-spice so eliminated. So very good! My husband thought it was a little heavy on the heat, so next time will add a bit less red pepper flakes (for him - I loved the heat) though we ate nearly all of it -- just enough left over for a light snack tomorrow!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

The BEST soup - beautiful color! Can't wait to share it at work tomorrow. I followed pretty close to the recipe but had to use what was on hand - olive oil, chicken stock, ground ginger, brown lentils, and I did add a splash of apple cider vinegar and a bit of coconut milk. Partial puree. Divine!

Easy Chicken Tortilla Soup

This was surprisingly delicious. I followed some of the other reviewers recommendations and added one can cream of chicken, one box of chicken broth, half a packet of taco seasoning, some cumin and a pinch of cayenne. I poached my chicken breasts in water with some taco seasoning. Served with grated mozzarella and a dollop of sour cream. Extra good second day.

Six Can Chicken Tortilla Soup

This was surprisingly delicious. Pineapple Upside-Down Cake VII

Super easy and delicious! I used 1/2 each light and dark brown sugars for more color, and a little less than called for. Used my cast iron skillet and it took about 45 mins. to bake.

The McCuddy

I was nursing a cold on a cold dreary day and thought this drink might hit the spot, and boy, did it! This is my new hot toddy. The slight amount of milk imparted a silkiness that smoothly bound the other ingredients together, making it easier on the tummy. Wonderful.

Pecan Sandies

Yields tender, melt in your mouth cookies -- these put store bought to shame. I toasted the pecans and used 1/2 white and brown sugars, also used one stick of margarine and one stick of butter because that's what I had. Preheat oven while dough is chilling. Don't overcook, and watch carefully if using a dark cookie sheet. I had to pull the ones on the dark sheets a minute or so earlier. I made these as a gift for my Grandfather's 94th birthday. A big hit!

Cherry Almond Coffeecake

This is more cakelike, but good for what it is - quick, easy, and satisfies a sweet tooth. I made mine with apple filling and added a bit of cinnamon to the top before baking and to the glaze; topped with toasted walnuts. It took about 40 minutes to cook in my 13X9 baking dish. Husband gave it 5 stars, and I gave it 3, so we settled for 4.
