Chicken Cordon Bleu II

Awesome easy to make dish....I had two leftover so I froze and will pull out next week and have for dinner. I pounded the breasts out to a semi flat state and then laid my ham and swiss down. I did a "foldover" in half and tooth picked....got great results. Let it simmer for an extra 5 minutes though, from 30 min simmer to 35 minutes simmer. Everyone loved it and made a perfect Valentines Day dinner with brocolli and new potatoes.

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

Our salmon turned out fabulous. I agree with everyone else to cut back on the salt. Others at the table said it was just right. We used a meat thermometer and cooked to 140 degrees and it came out perfect.

Kickin' Collard Greens

None of my guests had ever had any type of greens.....buy a "bunch"....cooks down to almost nothing....but, this was an amazing dish....very untraditional but was an excellent compliment to a "rack of pork" I prepared.....
