Slow Cooker Chicken Cacciatore

Delicious and easy. Picky husband enjoyed. I had chicken legs that were chewy when grilled and didn't know what to do with remaining as it was too much for one meal. Placed legs on bottom of crockpot and added a couple boneless breasts cut into thick pieces. I realized I was out of sauce so I used a 14.5 oz. diced tomatoes and small can of tomato paste (based on other recommendations). Not too watery at all. Used frozen diced bell peppers and the other ingredients in recipe. I also added Italian seasoning, basil, oregano, black pepper as well as the minced garlic. You can use any seasoning you like. I added a little crushed red pepper to mine as I like things spicy but family does not. Tender meat fell off the bone. Served over pasta.

Pan-Fried Asparagus

I've never been a big asparagus fan, but after using this recipe last week, I bought more asparagus to make it again tonight. I cut back on oil and butter slightly cause I'm always watching my weight, but it was delicious. Thanks.

Jalapeno Popper Spread

made this awhile back. I love jalapeno poppers, but hate making them. This was nice and easy, but not as much of a hit at a party as I expected. I will probably try again. Maybe I just lacked something. I put extra hot peppers - maybe I over did it.

Ham and White Bean Soup

Delicious and very easy. I didn't use cabbage and added a tsp flour, extra can of beans and a little pasta because I like bean soup thick. Am guessing the cabbage would have accomplished that, but I didn't have any. Ditalini or shells are good choices - just a small amount, because they soak up a lot of broth.

My Crispy Mashed Potato Pancake

My Mom made these when we were little. I tried to imitate it years ago, but my Mom says she used to use "a little of this, a little of that" and mine never turned out. These were perfect and just like Mom's. She never put chives, but I had some dried ones and added along with a little onion powder and pepper, in addition to the garlic powder the recipe called for. Thanks. This is a keeper.

Cheesesteak Egg Rolls

Though I thought they were somewhat tasty, my family did not like them at all. I deep fried and they were way too greasy, even after draining. Perhaps my mistake was thinking they'd be like the ones we had at a restaurant and they were not. Also, much more time consuming to make than the prep time shown on the recipe.

Vidalia Onion Spinach Salad

Excellent. I didn't make the croutons - not enough time. Meant to add store bought croutons, but forgot once the party started. Even without croutons, it was delicious. I had one vegetarian guest, so I put crumbled bacon on the side for people to add as desired. It was a hit. Got many compliments.

Baked Pineapple

Was hosting my first Easter brunch. Have a great baked pineapple recipe with bread, sugar and ton of butter, but have recently joined Weight Watchers and realized I needed something less fattening. Tried your recipe and everyone loved it. Took other readers' advice and cut sugar in half (still very sweet), used pineapple juice instead of water and was out of cornstarch, so I used about 1 1/4 tbsp of flour. Thanks.
