Chicken Enchiladas II

My kids love enchiladas and request them for every birthday dinner. I use a clove of garlic instead of powder. I don't reserve any of the mixture. I fold it into the chicken and put a small amount along the bottomish of the tortilla, sprinkle with cheese and roll it up. Before I place them in a casserole dish, I coat the dish with green enchilada sauce. Once the dish is full, I cover with more sauce and cheese. I bake it off & garnish with green onion and serve them with a little sour cream. I cut fat and calories when I can, too. This makes one 11x13 dish & one 8x8, which I reserve for dinner the following day.

Vegetarian Tortilla Soup

Family of 6 (including a vegan) tore this up for dinner! I made the following changes due to what I had: 2 14 oz cans of diced tomatoes (vs large cann of crushed), 2 4 oz cans of chiles (vs 3), 1 tablespoon (vs 3) of cumin, 1 can of black beans & 1 can of corn (added them with the broth/stock), 1 32 oz vegetable stock & 1 32 oz of vegetable broth (only because that is what I had). We poured the soup over the tortilla chips and garnished with shredded Mexican-blend cheese, sour cream, avocadoes & hot sauce. My daughter used vegan equivalent for the cheeses & sour cream. Cilantro would have looked & tasted great, but I didn't have any. Perfecto!

Slow Cooker Corn Chowder

Was in the mood for corn chowder & this looked like a good place to start. Here are the changes I made: Made 6 slices of bacon (reserved it for the top); Used a little of the bacon grease to saute the onions; Added some carrots; Added some crushed red pepper; Added can of cream corn; Omitted the ham; Used one vegetable bullion & one chicken bullion (ran out of chicken). Next time I think I will drain the corn and add a little of instant mashed potatoes if it is thick at the end. I served it with bacon, cheese & osyter crackers. My kids loved it! Thank you.

Tangy Vegan Crockpot Corn Chowder

Made this for my vegan daughter & asked her how she would rate this (as I made changes). She asked me, "before or after the hot sauce?" Before she added hot sauce it was a 4.5. After the hot sauce it was a 4.75! Here are the changes I made: Substitued the red pepper for half of a jalapeno; used almond & cocconut mike (as we ran out); Added some crushed red pepper; Didn't use lime; Put half of the mixture in the blender. Next time, I will drain the corn! Well, my daughter loved it and joked that she will be eating for an entire week! I suggested we freeze some, but she was fine with having it all week. We will see! Thank you for the recipe.

Chicken Enchiladas V

There are 5 in my family and we never have any left over! I add chilis inside & outside of the enchiladas. I think I also added some cumin before. Will continue to make these every few weeks. It is a favorite at my house.

Chuck's Favorite Mac and Cheese

This is a stand-by for my family of 6. If I have Velveeta I cube up about 6 oz and add to the recipe. I usually double the amount of elbow macaroni. I add a little crushed red pepper to the cheese mix & top the whole dish off with paprika before I bake it. Oh, I love this recipe!

Easy White Chili

Amazing! I used two cans of chicken broth and three cans of the great northern beans. I used two cans of white chili beans and pureed them in the blender to thicken it up. I topped with taco blend cheese, tortilla strips & sour cream. Beautiful blend with a little heat. Delicious!

Simple Macaroni Salad

This was pretty good, but made the following changes: I used elbow macaroni, 1 green pepper (would have loved to use red, just didn't have one), and used mayo AND sour cream (cup total). I used the Knorrs vegetable soup mix, which gave it nice flavor & color. I also added frozen peas. Next time, I will add little shrimp. Will take to a summer party!

This was very tasty, but it had consistency of salsa. Next time, I will not run everything through a processor. A little chunky is how I prefer it. It was yummy, though & I will make it again!

Spicy Tex-Mex Salad

My kids cheer when I say I am making this salad. None of us like tomatoes so we skipped them. Instead of using a whole bottle of dressing ( I use the Light Catalina), I coat each serving with the dressing and top with bean mixture. I then garnish with the fancy thinly sliced multi-colored chips. Each to serve as leftovers without getting soggy.

I love flan and mine didn't turn out as well as I hoped. Next time, I will use someone else's idea of using maple syrup. I think it will be easier and will have the same taste.

Broccoli Casserole

I made this for Easter dinner and it was very close to a family recipe that I was looking for. I will use low sodium cream of mushroom soup and may eliminate the garlic salt. My kids loved it, but I thought it was a tad too salty.

Best Ever Brisket

I made this exactly per the recipe & it was amazing! I used some Rudy's bbq sauce (from Texas) to dip the briskett. I ejoyed my left overs for three days. Next time I will get a better quality of meat.

Greek Pasta Salad I

I enjoyed this recipe, but changed a few things based on lack of ingredients and what others recommended. I did not use the following: mushrooms, tomatoes or sausage. I substituted the elbow macaroni for penne pasta. I also used half red wine vinegar & half basalmic vinegar. Next time, I would still do the same, but decrease amount. Very nice looking salad!
