Southern-Style Onion Rings

Nice crunchy onion rings and the batter doesn't fall off. Left out the thyme since I didn't have it, but the paprika, sugar, and pepper give it a nice flavor. Yum!

Slow Cooker Fruit, Nuts, and Spice Oatmeal

I wanted so much for this to be good, but alas, it wasn't. It didn't burn, but it did get hard at the bottom because it needed more liquid. I followed exactly, but to make it better, I would sub apple juice for the water (and add more of it), wait to add nuts until right before serving, add 1/2 tsp. salt and maybe some brown sugar. It was really bland, that which was edible. The milk did nothing for it. I used skim, so maybe next time use cream instead. Such a waste of good ingredients.

Scottish Oat Scones

These were yummy and super easy! I used dried cranberries instead of currants and I used orange sugar in place of regular sugar. These are great as is, but also did half with an orange glaze for those who like their scones sweet. Really, so easy and so fast!

Taco Casserole

Very yummy! I substituted the beef for half a bag of veggie crumbles and a drained can of black beans to make it vegetarian. I think next time I'll add a drained can of corn and maybe some hot peppers to give it some kick!

Gramma's Apple Bread Pudding

Sooooo yummy! I made mine with cinnamon raisin bread made in my bread machine. Soaked raisins in red wine and slightly cooked the apples prior to mixing in so they wouldn't be as crisp. So rich and decadent!

Cream Cheese Christmas Cookies

These cookies are not only yummy, but very pretty! I love that you don't have to scoop them to make cookies. For some reason cutting logs is easier for me. It also allows me to make the dough and then bake when I want or need to. For putting the dough in the freezer - instead of foil I used waxed paper and dumped the dough in and loosely rolled it and then twisted up the sized to squeeze in the gaps. Kinda like taffy. This worked great and they came out almost perfectly round. I also found I only needed to bake these 12-13 minutes. You don't want to over bake them as they brown and aren't as pretty.

These were just okay. Not good, not bad. Like others, they did not rise well. The taste was just okay, but I think maybe some additional spices or something would add a little to the complexity of the taste.
