Butterscotch Pudding I

Just made this easy recipe and it is ok, but not enough flavor for me. The real test will be when the grandkids try it tomorrow. I followed recipe, using 2% milk. No lumps, nice consistency. But then, I'm a dark chocolate fan.

Oatmeal Cakes

I was looking for a healthy, no bake shortcake with oatmeal for my homegrown strawberries. This recipe was perfect. Too hot to bake, and needing oatmeal to counterbalance a very cheesy macaroni and cheese dinner, this recipe fit the bill. I did add 1 tsp each of sugar, vanilla and maple syrup after reading reviews. I also didn't have any applesauce so used canola oil instead. I only got 7 cakes out of mix, tho. Thank you Sal.

Prize Winning Oatmeal Drop Cookies

Tried this recipe with M&Ms instead of raisins or nuts. They tasted really good but fell apart, or crumbled, easily. Used butter for shortening and followed recipe. Will try again putting M&Ms on top of dropped cookie dough and see if they hold up better.

Pineapple Pie I

Pretty good pie and easy. Used fresh pineapple, chopped, & a regular sized frozen pie shell, which worked fine. Little too sweet because I used sweetened coconut flakes, will use less sugar next time & add coconut flakes on top to toast. Will use this recipe to use up fresh pineapple after making Chef John's pineapple-upside-down cake.

Thai Basil Chicken & Vegetables

My 1st Thai food attempt. Used Thai basil from the garden, 14oz coconut milk/added some baby carrot strips/bell pepper strips (from garden),low sodium soy sauce & vinegar so it wasn't too salty, with a little bit of red curry.Yummy and fun.
