Aunt Teen's Creamy Chocolate Fudge

I saw the "greasy and crumbly" reviews before making this so I was extra careful to follow instructions perfectly. I measured everything ahead of time and stirred constantly. Unfortunately, my results were "greasy and crumbly". Isn't fudge supposed to be one of the easiest things to make? Oh well.

Fried Rice Restaurant Style

This was my first time making fried rice and it was definitely a learning experience for me. Why would you crack and scramble the egg in with the veggies? My veggies were covered in egg-gunk. And I now know why people suggest that you don't use freshly cooked rice...it's too soft...not the texture of fried rice I'm used to. I suppose I could use day-old rice, but I don't want to be prepping this a day in advance. Oh well, I tried.

Asian Orange Chicken

I made this recipe twice and it's just not for me. I tried and tried, but each time the breading kept clumping in the sauce. And even when I reduced the orange and lemon juice, it was still overwhelmingly tangy for me. It was good, but I certainly couldn't make it and present it to guests and that's kind of what I was going for.

Cottage Cheese Chicken Enchiladas

This is a quick and easy recipe that yields a lot of food. They weren't quite the enchiladas I was hoping for, but still good. I will likely make these again, but next time I'll add another can of enchilada sauce.

Jalapeno Popper Spread

Followed the recipe exactly and initially thought it was too mayo-y and I couldn't taste the jalopeno flavor at all. I added significantly more jalopenos, but still thought it was lacking. I refridgerated it and served it warm several hours later and it had somehow gotten much more spicy. I've never cooked with jalopenos so I wonder if that is normal or just a fluke. Either way, the dip was a HUGE hit. Everyone loved it.

Baby Back Ribs

This was my first time cooking ribs and it was quite successful. The meat was perfectly tender. Don't forget to remove the membrane from the back of the ribs...so much better that way.

Gary's Stuffed Mushrooms

These are delicious! I've made these several times now and I've adjusted the recipe slightly to contain less stuffing and more crab. The stuffing was just a little overwhelming for me. Made them for a couple of parties and everyone (who loves mushrooms that is) raved!

Red Skinned Potato Salad

This was good and I'll make it again, but it was a bit bland. Next time I'll add a bit more egg, definitely another stalk of celery, and maybe a little seasoning or vinigar. Subs: Used turkey bacon and no one was the wiser ;)I also boiled the celery for two minutes so it wasn't so crisp.

Aunt Millie's Broccoli Casserole

Pros: Very easy, minimal ingrediants, everyone loved it! Prepped two days ahead of time and refriderated - still turned out wonderful. Subs: Used 1 pkg of Ritz, cheddar cheese, and did not add salt. Will definitely make again. Thanks for the recipe!
