Broiled Tilapia Parmesan

I'd have to say this is a recipe for people who don't like fish and feel a need to disguise its flavor: the coating was much too strong for such a delicate fish. I won't be making it again.

It's a lot of chopping and prep, but was quite tasty. I liked the massive veggie usage! I would suggest that this dish needs NO additional salt, because it obtains quite enough from the fish sauce. I used hoisin sauce instead of the oyster sauce it called for and liked it.

Salsa Squash

This was very good. You can adjust how spicy it is by using different kinds of salsa. Be careful not to overcook the squash so it is not mushy. Excellent leftover with a little cooked chicken mixed in - in fact, I could see adding sausage or chicken to the recipe for a main dish casserole.

Carrot Bread I

This was good I thought, but not great. I followed the suggesion of another reviewer and whirled the coconut in the food processor, and thought that was a good idea - I also would not have liked the long strands of coconut. Also left out the cherries. Also used half applesauce and half oil. Perhaps it will taste better today, as these breads often do the day after baking.

Baked Brunch Omelet

Very good, even without the meat. A couple of comments: instead of 1 1/2 POUNDS of cheese, I think 1 1/2 CUPS is more accurate. Second point - this works well if you make it the night before and cook it in the morning. Also - check it before one hour, since mine was done at 45 minutes.

Sausage-Potato Casserole

Wonderful, hearty, and delicious on a cold winter's day. Use lots of potatoes, include some sweet potatoes, don't bother with lining the pan with foil - just grease it. It can be a bit greasy, but that may depend on the type of sausage you put in. I also cut mine in chunks as other reviewers have suggested.

Easy Apple Coffee Cake

Very tasty for a cake that starts with a mix, and easy to make. To avoid the problem of slices falling apart, I made mine in a 9x13 pan. All ingredients are the same (although I chopped the apples, and mixed them with the sugar/cinnamon/ nut mixture), just spread about 2/3 of the batter in the greased pan, top with the apples (pressing down), then drop spoonfuls of the remaining batter all over the apples and spread as best you can. Bake till the knife comes out clean, and you WILL need to cover it with foil to keep it from burning.

BUSH'S® Caribbean One-Pot Stew

This is a very good stew! and lovely with all the colors, even if it is a lot of chopping. My comments: there is no need to cook the sweet potatoes separately. Just peel and cut them up, and add with the rest of the veggies. They will be done by the time the pork is done. This recipe is excellent (and quicker) with the addition of 2 cups chopped cooked ham, instead of the pork.
