Broccoli Salad I

This is a long time favorite of ours. It's always a big hit and people are always surprised at how good it is. We've made changes for our personal preferences: we use jumbo raisins, red onion, and Marie's Poppy Seed dressing (found in the produce department of our local grocery store). Enjoy!

Zippy Egg Casserole

Very tasty and was popular with our guests. For me, personally, there was too much cheese. I am going to try cutting back on the cheese and maybe adding some hash browns and sauteed spinach in the middle.

Chicken Enchilada Soup III

This is fantastic! A friend made this soup and entered it into our annual "Soup Cook-off". This was the winning recipe! Can't wait to try it myself. I'll be following the tips of other reviewers to avoid the "grittiness" that some reviews have complained about. There was NO sign of grittiness in the batch my friend won with!

Agedashi-esque Tofu

Yum! Thanks for sharing this. My hubby is Japanese and he and my teenage daughter order this every time we're out for sushi. They thought Mom was awesome for making it at home and having it turn out yummy!

Asparagus, Chicken and Penne Pasta

This is a big favorite in our family. My teenager says she could eat it every day. We don't find it dry, as other reviewers say -- and we make it just as the recipe calls for. Give it a try -- maybe you'll enjoy it as much as we do!

Adrienne's Tom Ka Gai

We are big Thai food fans and we were very pleased with how this turned out. Even though I didn't have all the ingredients, the recipe is very forgiving and it turned out excellent. My husband is Japanese and really knows his Asian food so the fact that he raved about it was a big plus for me!

Day Before Mashed Potatoes

I love being able to cook some dishes ahead of the big Thanksgiving Day celebration. These potatoes are a family favorite. These are my modifications: I bake them for 50-60 minutes. I rub the inside of the casserole dish with butter, then spread grated parmesan cheese on the dish. I top the potatoes with bits of butter and additional parmesan. Enjoy!

Cheesy Enchiladas

These turned out very well, even with all the modifications I made. I had less of both cheeses available so I cooked chicken breasts and added shredded chicken to the enchiladas. (I used about ½ - ¾ of a brick of cream cheese and 1 cup of shredded cheddar). I used enchilada sauce instead of salsa. I didn’t use the green onions at all. I added strips of Velveeta to the top of the enchiladas before baking and drizzled chopped, diced jalapeños (canned). They were very tasty and got a "thumbs up" from the family.

Gramma's Old Fashioned Chili Mac

Very good! For our tastes, we made the following modifications: used Rotel instead of regular canned tomatoes; substituted pinto beans for the kidney; left out the green pepper and celery; added garlic powder. We let it simmer for 20-30 minutes to let the flavors develop a little. This solved the "soupy" problem that some reviewers commented on. Thanks for a good winter night recipe!

Cream Cheese Penguins

Another rave review for this recipe! The little penquins got alot of attention at a wine and appetizer party I attended. Based upon some of the other comments, I thought they would be cute but wouldn't be eaten because other folks said they weren't great tasting. Well, not one little penguin was left at the end of the night. A big hit all around.

Chicken Hurry

This has become a family favorite. It has also "saved my life" on several busy days because it is so quick, easy and tasty. I follow the directions exactly and we all love it. I'm surprised at the reviewers that didn't care for it -- I can't imagine why.

Little Meat Loaves

Oh my gosh -- my kids just love these! They call them "mini-meat lumps" and everybody is happy when these are on the menu. We love them for lunch the next day, sliced and made into sandwiches with some of the leftover bbq sauce spread on the meat.

Watermelon Vodka Slush

Yum! How refreshing on those hot summer days. I would suggest starting off with 1/2 of the vodka and then adding more to taste. It was a little strong for us -- but we managed!

Spam on the Go

My husband is Japanese and grew up in Hawaii, where Spam is very popular. This is exactly the kind of dish he enjoys for lunch. He was surprised and pleased to have me serve a dish that was "just like back home".
