Crustless Cranberry Pie

I had some fresh cranberries given to me and wasn't sure what I was going to do with them. I wanted to make muffins, but most recipes called for orange juice/zest and I didn't feel like running to the store. I happened upon this recipe and am VERY glad that I did! WONDERFUL! I followed as directed, except that I used coconut sugar instead of white sugar and almonds instead of walnuts. I chopped the almonds - when I make again, and I will, i will try roasting and chopping the almonds. Simply FABULOUS - thank you for sharing!!

Artichoke Spinach Lasagna

Butternut Squash Bake

I was very skeptical of the squash feta combination that was suggested by some reviewers. I just couldn't imagine those two ingredients together. However, I didn't have any blue cheese on hand, so I decided to be brave and give this recipe a try. I am SO glad that I did! What a wonderful recipe. Thank you for sharing! So happy to have found this little gem! Will definitely give it a try with blue cheese next time to compare.

White Bean Soup with Quinoa, Spinach, and Shiitakes

I have to agree with other reviewers - this was a good "starter" recipe. I added 2 cloves of garlic to the onions, as well as the thyme, pepper and salt that was suggested. I used 3 cups of veggie broth and an extra splash of wine. I also put in about 1.5 tsp of Kitchen Bouquet to give it a bit more color/flavor. I paired with a salad and warm, fresh rye bread and we really enjoyed. Thanks so much for posting this.

Baked Cod with Roasted Red Pepper Horseradish Sauce

Delicious! Thank you for this recipe! I used the horseradish sauce recipe on this site and it was easy to make and so-oo good. My only problem was in finding cajun snack - couldn't find at our grocer, so I used Kashi TLC vegetable crackers and added cajun seasoning. Our grocer had swai on sale, so I used it in place of the cod. You'd ever know the difference. My husband really enjoyed this - I will defintely make again. Thank you for a great recipe!

Black-Eyed Peas and Gumbo

Excellent! Thank you for this wonderful recipe that will definitely be our new tradition for ringing in the new year. I couldn't find okra so I used sugar snap peas and halved them. When it came time to add the meat, I split the soup into two pots, added the meat to one (kielbasa) and kept the other vegetarian for my daughter. I added some cooked rice to both. Very hearty and delicious.

Wow! Amazing recipe! THANK YOU! I used vegetable broth instead of chicken so that my vegetarian daughter could enjoy this as well. I followed teh advice of other and doubled the amount of squash. Will definitely make again - next time with spinach tortellini I think.

Zucchini Egg Bake

Great starter receipe - very versatile. Can create many different combinations so you never get tired of making/serving. Makes a great main dish meal for lunch and dinner too. My favorite combination is with mushrooms, tomato, onion and zucchini. Thank you for sharing!

Pineapple Enchiladas

Have made this wonderful recipe a couple times now and love it! A slight variation I made to give the enchiladas a little more substance...I added a chopped onion and a chopped green pepper to the filling mix and adjusted the amounts of the sour cream slightly to accomodate. Whole family LOVES these and begs me to make them more often. Even my mother, who typically doesn't eat mexican, asked me for the recipe after trying them at my house. Thank you SO MUCH for sharing this fabulous recipe!

Pork Tenderloin with Apples

This was absolutely scrumptious! I only had one apple in the house, so I used it and added 3/4 cup applesauce and used ordinary red cooking wine in place of the reisling. Even the pickiest eater in my house gave this a big thumbs up!

I am looking forward to trying this recipe. I am going to experiment with cutting back the sugar, maybe using agave syrup in place of. Also would like to try it with a mixture of low-gluten flours.
