Fresh Asparagus Soup

Omigawd. Best. Soup. EVER. I am currently eating this and I am SO happy!! I had my doubts about half way through, but this soup makes me proud to be a vegetarian! I followed the recipe "to a T" and it worked beautifully. Used unsweetened soy milk (can't see it tasting as nice, with regular) and plain nonfat yogurt. THE BEST.

Low-Fat Blueberry Bran Muffins

I had no blueberries on hand so I made these with raisins and flax instead. I used 1/2 cup mashed banana for the applesauce, and all whole wheat flour. Really great!

Ashley's Chocolate Chip Cookies

These were great! I didn't have enough butter so I used 1/4 cup of shortening with the 1/2 cup of butter and they turned out beautifully! If you leave them in balls they don't flatten alot so they end up big and soft! I did one batch like that, and one batch slightly flattened. KEEPER!!

Spring Cleaning Cookies

Haha, I laughed when I saw these were called spring cleaning cookies because this really IS all the ingredients people have left over!! I had everything on the list so I decided to bake them regardless....GOOD DECISION!! I followed the recipe EXACTLY and they turned out beautifully. Baked one batch at 15 mins, and another at 13 to give a choice between chewy or crispy. Lovely!!!

Butter Pecan Cookies

Excellent recipe! The dough comes out very sticky, but do not add more flour! After refrigeration it comes out perfectly. I made that mistake once. Also added 1/2 tsp. vanilla which tasted lovely!

Matrimonial Bars

These turned out wonderfully! The only thing I would do differently is maybe add a bit of milk or water to the mixture, it came out very crumbly the first time. Still great though!

Oatmeal Thumbprints

These turned out great! After reading that a few of these leaked through the bottom, I made mine a bit bigger by rolling them into 3" balls then making a more shallow hole, rather than a deep thumbprint. I used cherry, blueberry, and strawberry jam for mine, and all three kinds worked really well. I also used all shortening (ran out of butter...) This is definitly a keeper!
