Blueberry Grunt

This is similar to a dessert my grandmother used to make called Blueberry Roly Boly. The difference though, is we use Bisquick in it! So much easier to make the dumplings and they are softer in the berries. Add a 'hard sauce' of a stick of butter and cup of sugar mixed on top of a warm bowl of this and it's to die for!

Seven Layer Tortilla Pie

Nice twist! I added a few changes - ground beef with taco seasonings - great way to use left overs! Makes a lot too - also works reheated. I used lowfat cheese and sourcream, fat free refried beans and whole wheat tortillas and you never would have known! Thanks...

Grandma Johnson's Scones

Great base recipe, although was very dry on the offset. I added OJ and fat free half and half to get a dough to form. Great base for all flavors though....made orange, chocolate chip scones. Nice flake to them, dense and moist. Better after a day of sitting a mellowing.

Luscious Spinach Artichoke Dip

Thish was awesome! I used lowfat ingredients, but added 2% colby jack into the mix itself...it was wonderful! Thanks. This is a recipe I've been searching for!

Triple Berry Crisp

I have to say I was a bit disappointed in this dessert. I was so excited to read everyone's enthusiastic comments....and mind you, I have a culinary arts degree....I followed this to a tee....baking is a science! It was dry. It had good flavor, but it was dry! Too many crumbs...not enough juice to make it a cohesive, luscious dessert. Might tweak it...might not.

Hot Buffalo Chicken, Bacon, and Cheese Sandwich

This was a great and super easy dinner for me and my husband! We used light sour cream and equal parts mayo to sour cream - added hot sauce & cayenne pepper and then mixed w/the chicken. This would be even better if you mixed it up the night before to let the kick get into the chicken! Also added light cheddar cheese to try to reduce the fat! Added lettuce & tomato and scrumtious!

Sauteed Corn on the Cob With Chili-Lime-Cilantro Spread

This was very interesting. Next time I'll make it though with MUCH less Chili powder...it was really bitter so I had to increase the sour cream to cut the taste. Definitely helped to butter the corn first...then add the spread.

Chantal's New York Cheesecake

OK, so I was skeptical about this recipe, but tried it anyway. I have a degree in culinary arts and I felt the cook time didn't make sense but I thought I’d try it anyway. Sadly I was right. This cracked - or should I say - cratered in the middle in three directions after the first 45 minutes in the oven. I left it in with the heat off and it was done in about another 90 minutes. If I'd left it in the entire time it would have been ruined. Next time, I'll use the basis of the recipe, but will turn down the oven after 30 mins and bake it with the oven on and water in the oven to create moisture. The base flavor of the recipe was good that's why I gave it 2 stars....I had to camouflage the top with strawberries to serve it though - very disappointing.

Swiss Chicken Casserole II

Ok, so I've used this recipe for years. I've always added white wine though instead of milk and I don't use nearly that much butter on top at the end. Use the low fat cream of chix soup mix and Pepperidge Farm Herbed bread crumbs on top and you don't really need the butter at all. It makes the dish lower in fat and much more flavorful.

Chicken Enchiladas V

This has quickly become one of our favorite recipes! I've modified it for our tastes and now use, fat free tortillas, low fat cream of chicken soup and low fat sour cream. Still works wonderfully! Thanks for the great recipe!

We absolutely love this soup! I use the lowfat soups and use a little white wine for some zip along with some cayenne pepper and it's great on a cold night...freezes really well too!

Baked Macaroni and Cheese I

OK, so I'll admit it's a little bland; so jazz it up the way you want! The "flour taste" complaints are because you all don't let the roux cook long enough! It's actually a pretty simple cooking technique that if you follow it, the sauce will thicken immediately. Like the recipe says, add the milk SLOWLY! To make it even easier, heat the milk slightly and then add it to the sauce. Just don't add it all at once, the sauce will seize and become lumpy. This is a great recipe for a basic sauce or one of the mother sauces called a Bechamel sauce or white sauce. Once you master this sauce, you can master anything that is cream based, like mac & cheese or a chowder or cream soup....just be patient. Good things come to those who wait! :)
