Fluffy Lemon Fruit Pie

This was pretty good. Quick to prepare, but must have the chill time before serving. I used a chocolate graham crust which added to the flavor. This may be a one timer for me.

Apple Enchiladas

These were absolutely delicious!! I had enough filling to do nine tortillas, maybe mine were smaller than 8 in., but they were simply wonderful even with no ice cream, just hot out of the oven. They reminded me of apple dumplings. I will use this recipe a lot, they are so fast and simple to do. Many thanks to Brenda!!

Chicken and Dumplings II

I didn't really care much for this dish. I cut the potatoes down to three, and wished I had only used one. Toooo much potato/starch. Mine actually ended up a little dryer than I like them, after adding the dumplings with all the potatoes already in there... I say put this in the scratch file. Sorry....

Banana Sour Cream Bread

I also cut the sugar to two cups. Three just sounded too sweet, and it turned out just right for us. This was very good, but more of a cake than a bread. I used a 9x13 pan and baked for an hour. Worth trying for sure....

Champagne Salad

This was very good. I cut the sugar and cream cheese in half, and used fat free whipped topping in order to cut calories and fat, and it was still very good. I will use this a lot. Thanks

Baked Pineapple II

This was very good. Be careful what kind of bread you use for this, as the bread taste will be quite noticable. I used some hamburger buns that I needed to get rid of,(not the best choice). I also added a few nuts, and it really was more like bread pudding, which we love.

Jalapeno Corn Casserole

I didn't care for this recipe. The taste was fair, but it had too much liquid, even though I cut down some on the cheese and the milk. It did not thicken up at all during cooking.

Chile Relleno Casserole

I really liked this, but it just seemed like something was missing in the taste. Maybe some kind of tomato or salsa taste added to it would do the trick. MMMMM..will have to think about that for a while....

Rich Chocolate Pie

This pie was delicious, and very rich tasting. I used 1 whole egg and 2 egg whites, to cut down on the yolk content. I liked the fact that it was not all sugar also. This is my chocolate pie recipe from now own... Thanks Linda.

Best Ever Muffins

Awesome Slow Cooker Pot Roast

I used a 2 1/2 lb. roast, and one can of soup with the onion soup mix. I used one soup can of water, which was a little bit too much. The gravy was a little thin, but still very good. Mine cooked for 9 hours on low, and the meat was perfect. I will use this again and again.

Frozen Cranberry Salad

This was very rich and delicious. I used pecans instead of walnuts. Next time, I may try using coolwhip in place of the whipped cream in order to lighten it up a bit. That way I can eat more.... Try this one...
