Creamiest Rice Pudding

Reviewed: Jun. 23, 2011
Deeelicious! This is the best rice pudding recipe I've tried. It actually taste better than the one we buy at a local restaurant. I followed the recipe EXACTLY and it came out perfect! We also thought it was just the right amount of sweetness for us, no need to add an extra 1/2 c. of sugar or so but, of course it's all a matter of preference. I used 2% milk, added cinnamon and raisins on top when it was done, refrigerated overnight and it was SOOO good! We finished the whole batch within the same day and my bf is already requesting for me to make it again! Thanks for the great recipe! :)

Smokin' Scovilles Turkey Chili

Reviewed: Apr. 23, 2012
Very good turkey chili! I added 2 jalapenos instead of a habanero, omitted the kidney beans and added a whole can of corn. Also added some celery because my bf likes it that way. Really tasty! It was spicy but, not too spicy. You wouldn't miss the beef. I would definitely make this again.

Lemon Cupcake with Blackberry Buttercream

Reviewed: Oct. 23, 2012
I thought this cupcake was pretty tasty. My lemons were a little on the smaller side so, I used two and had a good lemon flavor. The frosting was a tad too sweet on its own but, had a balance when eaten with the lemon cake. I personally think it would have been better if I added more blackberry jam to it or mixed in fresh pureed blackberries. I'll try that next time! Mmmm. I will also be trying this with different berries in the future. **Note: My first batch of cupcakes came out really dense and flat on top. I tried it again with a new can of baking powder and it made all the difference! Second batch came out nice and fluffy. Make sure your baking powder is still active by placing a half tsp. or so in hot water, it will bubble immediately if still good. Don't go by the exp. date on the can. The first can I used wasn't expired but, barely bubbled. I should've tested it first before I baked that first batch. =/

Bacon Ranch Pasta Salad

Reviewed: Oct. 23, 2012
Made this for a potluck. I thought it was pretty tasty, especially with the bacon! I added a tad bit more than called for b/c I had extra from another recipe. Mmmm..bacon makes everything better. lol. Everyone that ate it enjoyed it. There were even other pasta salads there and was told that this one was the best on the table. Thanks for a good recipe. :)

Country Apple Dumplings

Reviewed: Oct. 23, 2012
This came out really good. My bf and his family looked at me weird when I had the Mountain Dew out on the counter with the rest of the ingredients but, I assured them it was supposed to be good. Lol. Luckily, it worked out and we all thought it was delicious! Warm, rich, buttery, sweet, and just a little tart from the apples. It was even better when we paired it with cinnamon ice cream. Yum! I've made it twice already. The first time I used margarine instead of butter and I had way too much liquid in the pan but, the second time I used butter and it came out better. Still a little too much liquid though, maybe I'll use half of the sauce ingredients next time.

Perfect Pumpkin Pie

This was just OK for me. We had three different kinds of homemade pumpkin pie this past Thanksgiving and this was the least favorite. Easy recipe to follow but, I won't be making this again.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Dec. 18, 2012
I thought this recipe was very good. I tried it both with turkey sausage and spicy Italian sausage. Both were very tasty. I love the tartness of the cranberries and apple paired with the savory flavors. I used a golden delicious apple but, might prefer a more tart apple next time. Also, I used fresh herbs..mmmm! Love the smell and taste of this..definitely go with fresh if you can. Although, I'm sure it would be just fine with dried. I did not stuff the turkey and just baked in the oven in a casserole dish at 350 degrees for about 35 min or so. Thanks for this delicious recipe. I will be making this again!

Awesome Turkey Giblet Stock

Reviewed: Jan. 12, 2013
This recipe was very easy to follow. It made the house smell so good. My bf said it smelled like Thanksgiving. :) I used it to make the Awesome Sausage, Apple and Cranberry Stuffing which, came out SO good! Although, since it does take quite some time to make, I don't know if I would do this again. I already have a lot to cook/bake for Thanksgiving, I think the stock is one thing I could take a short cut on. I'm pretty sure I could use store bought turkey or chicken stock that'll give me just as delicious results.

Pumpkin Cheesecake II

Reviewed: Jan. 12, 2013
This is very rich and delicious. Don't let the long ingredient list scare you away from trying this, it was very easy to make! I did substitute nutmeg for the mace simply because that's what I had on hand and omitted the lemon extract because I didn't have it. I loved the pecan bits in the crust, it gave it that extra oomph. I think I'm going to have to start doing that with all my graham cracker crusts from now on. I would actually double the amount of crust next time so that it goes all the way up the sides of the pan (I'm a crust lover). I did bake the cheesecake with a pan of water underneath it but, still got a crack in the middle once it cooled off. So, I followed the suggestions of other reviewers and made that maple pecan glaze to go on top. All I had was sugar free maple syrup and it still came out really good. It was a great accompaniment to the pumpkin cheesecake. This recipe is a keeper. Thanks Cathy! :)

Dutch Apple Pie with Oatmeal Streusel

Reviewed: Jan. 12, 2013
This pie was pretty good. I used Golden Delicious apples which, I usually love but, I would have preferred a more tart apple with this recipe. I didn't have any problems with a runny filling like I've had in the past with other recipes so, I thought this was great. I did like the oatmeal streusel topping but, I think I just prefer a regular crust. That's just me though. All in all, a good apple pie recipe that I will probably use again. Thanks!

Basic Flaky Pie Crust

Reviewed: Jan. 12, 2013
Who knew making homemade pie crusts was so easy?!! I've always been intimidated to try it and decided to give it a go this past Thanksgiving. It was so easy and quick to make!! What makes it even better is that I already usually have these ingredients on hand! It was a little tricky rolling it out but, just sprinkle enough flour on your surface and you'll get it. I also rolled mine out between two pieces of wax paper as someone else suggested. I will be making my own pie crusts from now on. Thank you!!

Pistachio Cake III

Reviewed: Jan. 13, 2013
I like how simple this recipe is. Sometimes you just want to make something quick and not go the full "from scratch" route. I only used 1 1/4 cups of water because I noticed that my box of cake mix was only 15.25 oz. I think next time I could even go with just 1 cup of water. I did use Pillsbury with pudding already in the mix and I didn't have any issues with the cake sinking, as some other reviewers mentioned. I also added some chopped pistachios to the batter which, made it so much better. I think the taste of the cake as is definitely needs more pistachio flavor. I wouldn't have liked it as much without the real chopped pistachios in it. I think next time I will try this recipe using a mix that doesn't contain pudding (Duncan Hines), maybe use two packages of pistachio pudding, add a full teaspoon of the almond extract or use actual pistachio extract, add more chopped pistachios, and omit the green food coloring. I thought the color was just fine without it. However, the extra green would be nice for a holiday such as St. Patrick's or Christmas. Overall, it was a quick and easy recipe that produced a good enough cake. My family enjoyed it. Thanks!

Banana Cream Pie I

Reviewed: Feb. 15, 2013
Yum! This pie is really good! The first time I made this pie, I followed the directions to a T. It came out good and sliced beautifully but, I felt that there wasn't enough pudding compared to all the bananas. Also, the bananas turned brown fairly quickly. The second time, I used only three bananas and mixed it into the pudding before putting in the pie shell and I did NOT bake it. I just refrigerated it overnight. This time around my bf and I enjoyed the taste/balance of the pudding and bananas much better. Mixing it together also prevented the bananas from turning brown. The only problem was that this pie did not set as good as the first one I had baked. By the way, I did not have any problems with my pudding being too runny. I agree with the other reviewers, you probably did not cook it long enough. I also used whole milk for best results. Next time I'll continue to mix the pudding and bananas before filling the pie and bake it..or if I don't bake it, I'll use the cornstarch suggestion instead. Either way, this is a great recipe to start from and just tweak however you like. I added a dulce de leche drizzle on top along with some toasted coconut. Yummy combination! My family loved it! Thank you!

Ginataang Manok (Chicken Cooked in Coconut Milk)

Reviewed: Feb. 15, 2013
I'm a young Filipino and have been trying to learn how to cook more Filipino food. I was happy to see that there were some recipes on this site. This was really easy to follow. My family and I thought it was pretty good. Although, I personally prefer stronger bolder flavors and I liked this much more the second day after I tweaked it with additional seasonings that were more to my liking. I would also use fresh spinach next time instead of frozen. All in all, a good recipe to start from. Thanks!

Peach Preserves

Reviewed: Sep. 29, 2013
I used double the peaches or so because mine were small. I also cut down the sugar by 1/2 a cup but, it was still a little too sweet for me. It was good however, on top of biscuits. I think the little saltiness from the biscuits made a good balance. Overall, my family really liked it. I even had my aunt ask for the recipe. I think it's worth a try and then from there you could tweak it to however you like.

Angie's Dad's Best Cabbage Coleslaw

Reviewed: Sep. 29, 2013
I've been making this coleslaw every summer for the past few years. My family really loves it. We're not usually fans of mayo-based coleslaws so, this one was perfect. The sweet tangy taste is a great compliment to grilled meats/bbq or even in sandwiches. I've used splenda in place of the sugar before due to some diabetics in the family. It's just as good that way as well. I've also used half red cabbage before for added color but, after it sits for awhile, it turns the whole salad pink. Lol. I also followed other reviewers tips about halving the sauce ingredients. I think it's the perfect amount this way. Delicious. Thanks!

Fresh Southern Peach Cobbler

Reviewed: Sep. 29, 2013
Oooh my yummm!!! My family loved this. We topped each piece with vanilla bean ice cream and it was gobbled up so fast. We wished we had more! This was the first peach cobbler I've ever made and it was easy to follow. The only thing I would change next time is to make two batches because it was gone so quick. Lol. Also, I agree with some of the other reviewers on doubling the topping. Delicious! This will be my go to recipe every summer my Aunt brings me a box full of peaches from her garden. Thanks! :)
