Blueberry Coffee Cake I

This cake was fantastic! I made it for work and one of the docs ate 4 pieces! I did make a few changes that were suggested by other uses. I used canola oil instead of butter in the batter, increased milk to 3/4c. and used 2 cups berries. I did not layer the berries I just folded them into the batter. This recipe is a keeper!

Summer Corn Salad

This is awesome! It is fresh and light, a nice change from most summer salads. I made a few changes. I used red onions sliced thin for its sweet flavor, cucumbers for color, and added chick peas for a little something extra. I doubled the recipe and 4 hungry men devoured the dish. I had very little left!

Swanson® Maple Dijon Chicken

This chicken is family approved! It was sweet yet had a spicy tingle. Being from New England I used REAL maple syrup and I think it made a difference. One problem people seem to have is getting the sauce to thicken. If you only reduce the heat to a simmer the sauce turns out super sticky and thick. I did not cook the chicken on the stove top but used the grill. This will be a great summer supper!

Caramelized Baked Chicken

These chicken wings are super tasty! They were a great addition to game day snacks! The only changes I made to the recipe was boiling the sauce on the stove for 10 min. This made the sauce really stick to the wings. And I also made a spicy version by adding 1/2 tsp red pepper flakes.

Strawberry/Rhubarb Crumb Pie

If I could rate this recipe with more than 5 stars I would! I brought this to a family dinner and my father-in-law ate half the pie. No lie! The only change I made to the recipe was that I added one tablespoon cornstarch to the mixture before adding the strawberries to make a thicker filling.

Mom's Zucchini Bread

Very good. Very moist. I had no sour cream for my usual zucchini bread recipe so I found this one and it is a great find! I used the suggestions made by MomFromSeattle and I thought they were great changes. I also made one loaf and 12 muffins instead of two loaves. The muffins need to bake for just 20 minutes. I will definitely use this recipe again!

Monkey Bread I

This has become a much requested treat from co-workers and at family gatherings. It is simple yet its gooey sweetness makes its addicting! It is somewhat time consuming to build the bread but well worth it

Poke Cake III

This cake is wonderful in the summer. it is fresh light and fruity. I used strawberry jello and then put fresh sliced strawberries on top instead of cherry filling. In the winter it makes a tastey treat with chocoalte cake, and then shaved chocolate on top.

Delicious Ham and Potato Soup

This soup is SO easy to make! I made this recipe for a bunch of skeptical meat and potato type men and they ate it, loved it, and came back for more. this soup is thick and creamy. I make it exact to the recipe. I liked the ham but it would also be good with a italian sausage!

Restaurant-Style Potato Salad

I made this salad for a fall pig roast and it was fantastic. It was gobbled up and gone in no time! I omitted the carrots and pimento and doubled the onion and celery. I also added 2 chopped hard boiled eggs. A++

Fish Roll-Ups

SSSOOO GOOD! this recipes is my boyfriends most requested dinner. The stuffing melts in your mouth. I used minced shrimp instead of crab, water crackers instead of ritz and since I live in New England I used Cod instead of sole. The cod is a thincker cut than sole so I layered the stuffing and then fish on top. This is a great special occation dinner.
