About this Cook
I am a pastor's wife and young mother. My husband loves to eat, so I had to learn how to cook. I didn't know how to cook before I got married. Thanks to this site, my church thinks I am a pro! I am a musician and got my degree in voice study.
My favorite things to cook
Stir-fry, pasta, homemade soups, desserts!! Anything for a church potluck.
My favorite family cooking traditions
Homemade spaghetti and meat balls, lasagna, chicken casserole, sweet potato casserole
My cooking triumphs
Most things with a recipe. I always have wonderful desserts.
My cooking tragedies
Fried shrimp. I am still learning how to fry! Any suggestions?

Salsa II
Delicious! But it definitely only takes 3 jalapeños to make it hot. I can't imagine a pound! I like mild salsa. Follow the recipe, but add only 3 jalapeños for a mild salsa.

Authentic Pizza Margherita
I admit that I cheated. I used Mama Mia's premade crust, then finished with toppings as directed. The picture showed tomatoes, so I thinly sliced a garden tomato and added it before cooking. Delicious! I will make this a favorite!

Mild Cheesy Chicken Enchiladas
Yummy recipe! I followed advice from others and boiled the chicken in chicken broth for 10 mins or so, then I used two forks to shred the chicken. Afterwards, I cooked the shredded chicken with powdered taco seasoning. Then, I mixed it with the onion, sour cream, and cheese mix. Fill the tortillas, then top with roasted red pepper organic soup and cheese. Cook for 20 minutes. Remove and spread sour cream over top. Add black olives if you wish. This recipe is fabulous! My 1-year-old ate it up!
