Chef John's Caramel Chicken

Excellent!!! I did not have jalapeno's so I used about a tablespoon of Sriracha in the sauce and used cashews instead of peanuts. Quartering the thighs gives this a really nice texture. Thank you!!!!

Pretty Chicken Marinade

This is now my "go to" chicken marinade recipe. Basic ingredients, simple, delish!!! I do usually sub fresh garlic for powder. The lack of sugar in this recipe keeps your chicken from burning so easily.

Baked Dijon Salmon

I slather the honey dijon on thick, then pat the crumb mixture into it. Super easy if you use a food processor or blender for the nuts and parsley.

Sarah's Rice Pilaf

Easy and so delish!!! Browning the orzo or broken spaghetti is what gives this simple recipe it's deapth and richness. I follow this recipe up to the point of mixing in the rice and chicken broth and add it all to my rice cooker. I also add a tiny bit of cayenne pepper.

Washabinaros Chili

This recipe makes some epic chili as is, but I do usualy substitute one bottle of Youngs Chocolate Stout for the beer and I don't bother with the coffee since the Youngs is coffee/chocolatey flavored.

Linguine with Clam Sauce and Baby Portobello Mushrooms

Amazing! I did make a few changes based on what I had on hand and my love of garlic. I made 2 servings but only used one can of clams (it's all I had), doubled the garlic, added some crushed red pepper to the garlic step and I substituted clam base for the chicken bouillion. I did not add the double garlic to the skillet until the mushrooms were almost done, then I added about 1/2 cup of white wine to make up for one less can of clam juice and reduced that by 1/2 before adding the next ingredients. Everything cooked way faster than the recipe says. I only cooked the last step with the butter and clams for a few minutes so the clams weren't overcooked. So good! I would be proud to serve this to guests :)

Chicken Stir-Fry

Great stir-fry recipe! It is very easy to make this your own recipe by substituting tofu for chicken, altering the fresh veggies you have available or spicing it up with some chili oil. I like to leave out the water chestnuts and add some bok choy. Excellent flavor, thanks for sharing this.

Smoky Grilled Pork Chops

Delish! I have used this recipe several times. Last time I used country pork strips, cooked them on a campfire and sauced them with a quality BBQ sauce in the last few minutes. Best pork ever!

Fish Tacos

EPIC!!! We still talk about these fish tacos and how amazing they were. These do indeed taste like So. Cal :) FYI: fried fish freezes well and reheats in the oven as if heating "fish sticks". We did this with the leftover fish and had tacos for the next few days.

Hungarian Mushroom Soup

Fantastic soup! Very delicate flavors balance out nicely. I was looking for a soup that featured mushrooms and this was perfect. I made a few minor changes. I added 1/2 cup of half & half to the 1 cup of milk since I was using 1% milk, and I added a bit of dry white wine... maybe 1/2 cup or so. I also used 3 types of mushrooms, oyster, shiitake, and crimini, but since the recipe does not specify, that may not be considered a change. I can't wait to have the leftover soup tonight as a starter for grilled ribeye! Yummmm!
