Brandi's Won Tons

Reviewed: Mar. 15, 2012
The only thing I added was 1 Tsp of sesame oil to the filling. Only thing I didn't like was the texture...was a little mushy.

Weeknight Wonton Soup

Reviewed: Mar. 15, 2012
This was a hit here. I made a couple small changes. I don't like Chinese five spice so I used thai seasoning. It needed a little something more...I added a Tb of soy sauce and now its just right. Keeper I used brandi's won tons from this site..

Margarita Cake with Key Lime Cream Cheese Frosting

Reviewed: Mar. 14, 2012
family liked these. I could not get frozen margarita mix so I just used 10 oz of premade liquid margarita mixer and it worked fine. I did not use the booze in the frosting so hubby thought they just tasted like citrus cupcakes though we did like them. I didn't use the booze in the frosting at first with kids eating them...but later added 1tb of tequila to the half batch and it was better.more like a margarita.

Tomato Pie I

Reviewed: Mar. 12, 2012
excellent with pretty much the same changes as previous posters: I drained the tomatoes first so not too soggy and pre baked the crust for 15 min first. The amount of tomatoes I had on hand was not quite enough so I stole the idea of a previous poster and tossed some corn in there too to fill the crust....came out great.

Garden Stuffed Baked Potatoes

Reviewed: Mar. 12, 2012
used 1/2 tsp of salt and 1/4 tsp of pepper for the "to taste" part. Too much onion/need to cut it back to half an onion. I use the ranch dressing recipe from this site...will never go back to bottled again its sooo much better on the herb flavor!!

Peppered Shrimp Alfredo

Reviewed: Mar. 11, 2012
There isn't any getting around the fact that jarred Alfredo sauce is awful stuff. I think I have tried every brand. The one I used this time Victoria was the lesser of the evils. It was better since it was doctored up with added cream, butter and cheese....but could have been better yet with real Alfredo sauce in the first place.By the time you are done doctoring the jarred sauce you could have made it from scratch already. Only change I made was to use less red pepper....to me 1 tsp would overpower the other flavors with heat.I also only used half an onion/think a whole one will overpower the shrimp. For the s and p to taste: used 1/4 tsp pepper, 1/2 tsp salt and I had cut the red pepper back to 1/ 4 tsp for my tastes. In short: would be a 5 with real alfredo sauce so will make it again...just not with the jarred stuff.Update on leftovers: had the leftovers day 2. The sauce which had been a bit thin was sopped up by the pasta and the flavors had blended better. It was sooooo much better the second day!

Honey Key Lime Grilled Chicken

Reviewed: Mar. 11, 2012
Good but not great. I did use key lime juice and marinated 30 min per instructions....didn't have a lot of flavor. Not a keeper for me.

I liked the coating...just not the green tomatoes. Never had them before...just not for me. I would use this coating on other veggies though.

Delicious Stuffed Potato Pancakes

Reviewed: Mar. 6, 2012
I made these with mild breakfast sausage instead of ground beef since that is what I had on hand. I got 8 patties out of it so maybe my patties were a bit smaller. I cooked them on low so they cooked well on the inside when the outsides were browned. I did not need to precook the meat to get them done through this way. Did not need much oil to fry them in either...just sprayed a little veggie oil on the pan and the grease that cooked out of the meat took It from there.

Taco Seasoning I

Reviewed: Mar. 6, 2012
I need a pkg of taco seasoning to make Chicken Taco soup and didn't want to run to the store JUST for that/found this recipe. Used half a batch to replace that packaged mix in the recipe. Not surprisingly this does have a big more kick than the pre packaged version for the same amount!

Slow Cooker Chicken Taco Soup

Reviewed: Mar. 6, 2012
I used Taco Seasoning I from this site...half the batch....and one can of tomatoes with chilies and one can of plain diced tomatoes since that is what I had on hand. It was plenty spicy! At my max comfort tolerace. I suspect that has to do with using the fresh made seasoning above. The stuff out of the Ortega or Taco Bell package would probably not pack as much punch.

Chicken Scampi II

Reviewed: Mar. 6, 2012
made it as written first. The sauce tasted great going into the pan. After cooking with the chicken it lost some of its flavor. Added 2 TB sherry and andother TB of lemon juice. Still not quite there though....served it with some fresh ground pepper and grated Parm cheese. Better. I will make it again but thinks it still needs one more clove of garlic.

Nutty Coconut Fish

Reviewed: Mar. 4, 2012
Although a lot of previous posters thought the mustard to Mayo ratio was too much mustard I kept it that way...my dijonaise is usually half n half. I do use a mild grainy mustard though. I did cut the salt and red pepper in half though...not much needs more than a half tsp of salt to bring out the flavor and I did not want to overpower the delicate fish and coconut with too much heat.like many other posters...I put the spices in the wet stuff.

Pull-Apart Hot Cross Buns

Reviewed: Mar. 4, 2012
This was a very sticky dough/ I had to add a ggod bit more flour at the kneading stage. I only used half the cardomom as I like it but husband and daughter do not....needed it very subtle for them. I like that this one does NOT use the usual icky candied/artificially colored fruit stuff.

Chicken Pesto Pizza with Roasted Red Peppers and Asparagus

Reviewed: Mar. 3, 2012
This was great.Very minor changes: I used the one leftover chicken breast we had from dinner last night when we had grilled chicken....no canned chicken. I roasted my asparagus lightly first. I only used 1 clove of garlic figuring there was enough in the pesto already.Only thing I added was a dusting of oregano on top.
